The average cooking time is just under 1 hour since the Big Green Egg is powerful and you use direct heat to cook the chicken wings.

For regular smokers where you do not use direct heat to cook the chicken wings, it will usually take around 2 to 2 and a half hours to get up to the desired temperature.

This is because the heat will not necessarily burn the skin of the chicken wings.

That means that you do not have to flip the chicken wings while cooking as the heat is more evenly distributed.

Smoking can be quite addictive. So much so that I decided to add a touch of smokiness to my chicken wings last weekend. It only takes about 45 minutes of time on the grill to achieve serious smokiness, and youll be smacking your lips in satisfaction.

Ive been hearing about Drapers BBQ rub and sauce for a while through some of my BBQ blogger friends and this was the perfect chance to give their sauce a test drive. So, I used Drapers BBQ sauce for this recipe but you can use whatever rub you have on hand for this recipe.

Drapers Rub and Sauce can be used together or separately. The rub and sauce stand on their own, but together, they complement each other and create a unique, zesty flavor combination.

The brands rub is mild with a slight kick not overwhelmingly spicy or salty. Its sweet with a hint of paprika. On the other hand, its sauce defies the definition of regional sauce. Its not Kansas City, Carolina or even Memphis style. Its peppery, thick but not overly so and rich without being overly sweet.

How To Make Buffalo Smoked Chicken Wings Recipe

Step 1. Place a wire rack on top of a baking sheet. Rinse wings in cold water, pat dry and place wings on prepared baking sheet.

Step 2. Place baking sheet in refrigerator, uncovered, for three hours to dehydrate. This is critical to the final texture of the chicken. This step will prevent the wings steaming when you cook them, which creates a rubbery texture. Were wanting the crispy texture of fried hot wings.

Step 3. Set up the Big Green Egg for indirect cooking at 225 degrees. Place wings on the smoker for one hour.

Step 4. Increase heat to 325 and let wings cook another 30 minutes, then flip and smoke for another 30 minutes or until temperature registers 165 degrees on an instant read thermomter. The key is to not pull the wings off until you get that nice crispy, charred outside. You can tell by touch.

Step 5. While the wings are smoking, make hot sauce: In a small saucepan, over low heat, combine butter, hot sauce, black pepper, and garlic powder and bring to a simmer . Stir to combine and remove from heat.

Step 6. Remove wings from smoker and toss immediately with sauce until evenly coated. Serve with blue cheese dressing and celery

Cooking Round Two Directions

Once theyre thoroughly coated in hot sauce, we return them to the Big Green Egg for about 10-15 minutes with the lid opened. If we are feeling adventurous and want to risk burning ourselves, well take off the place setter and cook them for these last 10-15 minutes like we would if we were on a grill just so we can get some flame on them. If we are lazy we just leave the lid opened and let the heat rise from the circulating oxygen on the Big Green Egg and this is usually enough that some flames will come up around the sides of the place setter and give them just enough char for our tastes.

Thats it. Feast like the kings and queens you are.

This recipe is about as easy and delicious as they come:

1. Marinate wings in your favorite sauce.

2. Set up your Egg for indirect cooking at 325°F and add some pre-soaked wood chips for smoke flavor.

3. Place wings on your Egg for 40 minutes flipping them at the 20 min mark.

4. Fire up B.B. Prime and set on medium heat.

5. Transfer 6 wings at a time from Egg to B.B. Prime grill grate and top with a dab of sauce.

6. Insert Wings into B.B. Prime for 2 minutes on each side until wings start to turn dark brown and crispy.

7. Remove, top with another dab of sauce, and pair with Football and Cold Beer!

Pro tip: If you are smoking a lot of wings, place finished wings in the upper warming pan of the B.B. Prime to stay warm and crispy, while the rest of your wings are cooking.

What Dipping Sauce Should I Serve With Baked Buffalo Wings Recipe

When making wings there are two traditionally served sauces. Some people like to use blue cheese dressing and other people like to use ranch dressing. Either type of dipping sauces tastes fantastic with these smoked wings. You can also make a buffalo ranch sauce for the wings. Sometimes, when I have a craving for BBQ chicken, I like to make a BBQ sauce mixed with ranch to dip these wings in. It is perfect for when some people want barbeque sauce but not everyone.

Crispy Big Green Egg Chicken Wings

  • Place wings on wire rack set atop a baking sheet
  • Sprinkle kosher salt over the wings on both sides
  • Place baking sheet with wings in the fridge overnight
  • The next day take your wings out of the fridge
  • Setup your Big Green Egg for indirect cooking and preheat to 350° adding some wood chips for a little smoky flavor
  • Use a little mustard slather as a binder for your wings then cover both sides with your favorite BBQ rub
  • Place the wings in the Big Green Egg skin side down and let them cook for 20 minutes then flip to skin side up
  • Let them cook for another 20 – 30 minutes until they measure 165° with thermometer
  • Remove wings, sauce, and serve

Ever since we bought a Big Green Egg back in September, the way that we cook has been all shook up. I find myself asking can I put that on the Big Green Egg? for almost everything we cook! Big Green Egg and I are working together today, sharing our Big Green Egg grilling tips for chicken wings. Our tips will make you the big kahuna of chicken wings and they will come out perfect every time.

First let me introduce you to my hubby, with his favorite gift ever. For Christmas one year, everyone in our family pitched in to give him Big Green Egg gift cards. We put a little money in ourselves to buy this baby. Gas grills that rusted out after just a few years of use really frustrated us. We figured by the time we paid for three gas grills , we would have paid for an egg. This grill will last forever.

We bought a large sized Egg, so we can grill turkeys and pork butts for BBQ. If you do a lot of grilling, we don’t recommend buying anything smaller. We have tried other lump charcoals, but the hubby says Big Green Egg’s brand is the best. Luckily, we to live close to BGE headquarters, so we can pop in and pic up a bag really easily, but there are plenty of places to buy it.

Well give you the recipe up front. We hate the websites that bury recipes at the bottom of a novel of romanticized gibberish. You can scroll for the story and pictures later.

We love our Big Green Egg. We also love wings. Unfortunately there arent too many Big Green Egg recipes out there that show you how to smoke them and not just grill them. We hope to set that straight. This is actually a combination of 3 different recipes . . . the wings, the sauce, and our all purpose rub which we use on everything we smoke.

Lets start with the Rub. We wish for the life of us we could remember where we found this recipe online so we could give them some credit. We literally use it on every piece of meat we smoke on the Big Green Egg. Whether its a whole chicken, a butt, a shoulder, or chicken wings, this simple rub never gets old for us. It is pretty straight forward and probably no different than most homemade rubs but it is our go-to base for everything we do on the Big Green Egg. This makes about a cup so youll have plenty left over for other smokes. Just get you an old spice jar and put the leftovers in there. If you want enough just for the wings, you only need 1/4 to 1/2 of what this will make so just do the math accordingly. We always make more so we can use later.

Cooking Round One Directions

In terms of temperature and time, we took MikeGs from the Big Green Egg forums advice and directions as a jumping off point. His recommendation is to set the Big Green Egg up for 325 degrees indirect cooking.

If youre new to indirect smoking on the Big Green Egg, make sure you cover your place setter with foil as it will save you tons of time cleaning up when youre done.

While MikeG recommended 325, I dropped a few degrees lower in the 300-310 range because I wanted to put mine back on after we applied the wing sauce to char them a bit and finish out the cooking .

Cook them like this for about an hour and fifteen minutes to an hour hour and a half. At about the hour mark you should start hearing the fat drip out of the wings and sizzling down on the aluminum foil. This will last for about 10-15 minutes. When you quit hearing the fat drip go ahead and pull them out and toss them in hot sauce.

So lets talk about the hot sauce.

Normally we avoid Food.com recipes like the plague. But this recipe looked good enough when we first started looking and was easy enough that we figured we would give it a try. Turns out we liked it so much that we havent ever tried anything new. We have made some slight modifications like adding more Franks and adding cayenne pepper. But for the sake of not making it confusing the recipe and directions are below.

Put Your Wings Onto The Big Green Egg To Start Cooking

Close the top, or your food wont cook. The next picture shows how to set the daisy wheel on the top and bottom vent to keep a low temperature of about 200-250 degrees. This will slow cook your wings so they don’t burn, and they’ll get a good smokey flavor.

Let them cook for about 15 minutes on the first side, then flip them for another 10-15 minutes, or until they’ve cooked through.

As you can see above, there were a few flames. All you need to do is close the lid and completely close the daisy wheel on top. In seconds your flames are gone!

Chicken Wings On The Big Green Egg

Here is a meal that is perfect for Fathers Day. Tangy and sweet chicken wings cooked low and slow on the Big Green Egg.

I have not cooked wings yet and over the first year of having an Egg, I have to say, chicken is probably my favourite meat to cook. So it is kind of shocking that I have not tried wings as I sure love eating them.

Part of my hesitation was always the preparation of cutting the tips off. I just did not enjoy it.

So when I saw packs of chicken wings with the tips already cut off on sale at the grocery store last weekend, I went for it.

My family and I are sure glad I did.

Here is my recipe for chicken wings on the Big Green Egg.

You will need:

  • 1-2 lbs of chicken wings with the tips cut off.

total cooking time 1.5 hours and they will easily feed 3-4 people.

Step 1.

Create your dry rub. In a bowl I added equal parts sugar, salt, pepper, chili powder, paprika, cumin, coriander, onion powder, garlic powder and a little chili flakes for even more heat. Stir it all up and have ready to sprinkle on your wings. Take out a small cup to mix in your sauce later. Throw your wood chips in water so they can soak for a few hours.

Step 2.

Pour the dry rub all over your wings and really stir it up making sure the wings are totally covered. You can now wrap up the wings and put them in the fridge until cooking time. I had mine in the fridge for a few hours.
