The texture of Just hasn’t completely won me over yet, but I think this is a good start for plant-based eggs. The flavor is passable, and the texture is tolerable when combined with other ingredients.
Just Egg isn’t recommended for baking quite yet, but when reached for comment, the company said it’s “working on it!” It’d be interesting to see if Just releases any other “egg” products for people who aren’t as into scrambled .
As with Beyond Meat and Impossible Foods, if we can reduce our dependence on animals — even by eating an Impossible burger, Beyond taco, or Just Egg sandwich every once in a while — strides can be made to better our food systems and create more sustainable options.
“The food system needs new tools to improve the way people eat,” the Just culinary team said. “We realized that those tools can be found in the vast world of plants.”

What Does Just Egg Taste Like
Since I paid $ 4.99 for my JUST egg bottle and decided to be the guinea pig, let me show you what I made and tell you what I think.
First, JUST Egg looks like a scrambled egg, its texture and consistency, and it even looks like a scrambled egg. What does it smell like? Nothing much! It smells like nothing, but when it cooks, it smells like an egg, no pun intended. Even though JUST Egg contains oil, I used my nonstick pan, so I don’t know if it needs any additional oil if cooking in a regular skillet.
Of course, the most crucial part is the taste. Before going plant-based, l didn’t like eggs, but I know what they taste. So, my husband became my test kitchen guinea pig. According to my husband, it tastes just like an egg. So, even though I am not an egg fan, I took a bite, and he was right the taste, smell, and texture are very similar to an egg. I’m not too fond of it, but he LOVED it.

Potential Benefits Of Just Egg
Just Egg exists as more than simply a zero-cholesterol egg option. “It’s great that plant-based eggs are available to those who are vegan or for those with egg allergies or intolerances,” Ehsani says.

Would I Buy Just Egg Vegan Egg Again

Yes, Id buy this Just Egg vegan egg substitute again and I actually purchase it regularly, especially since the price has gotten a little more reasonable than when it first came out. Even though I still crave and mostly make tofu scrambles, I like this as a change of pace and its super easy for a quick, filling protein to cook up in about 5 minutes when Im feeling lazy. Another concern is that vegan eggs are made with a whole list of ingredients like mung bean protein isolate, canola oil, natural flavors, potassium citrate, and soy lecithin, Rizzo says. While these arent necessarily bad for you, its a complicated list, especially if you are attempting to eat more whole foods that are less processed.

For a vegan substitute to eggs this was pretty good. I made scrambled eggs with just cheese and a little pepper. The texture wasnt exactly the same as real eggs, but it didnt matter. I actually cooked some Beyond breakfast sausages in a small pan and then poured in the Just Egg which amped up the flavor with the sausage juices. I dont know if you could use this when baking though. Would love to see a review on that

People in Asia got the lowdown on JUSTs vegan egg before the US. In Hong Kong, bottles of the mung bean-based egg were rolled out in the plant-based plaza, Green Market in January 2018. Luxury hotel Grand Hyatt Singapore has also been treating patrons to JUST Egg since October 2018.
The JUST Egg recently became available in mainland China. How much Just Egg to use is equivalent to using real eggs. A large egg is about 3 tablespoons, give or take. For most recipes simply substitute 3 to 4 tablespoons of Just Egg for each large egg. For each extra-large or jumbo egg called for substitute 4 tablespoons of Just Egg.
In recipes that need either a more eggy flavor or a stronger structure, use 4 tablespoons of Just Egg per egg. This would apply to brownies and cookies that youd like to be crisp but dense. When a lighter texture and milder flavor are desired, as in lighter cakes or puffier cookies, use 3 tablespoons of Just Egg for each egg.
Hybrid Protein Products Could Combine Cell
Mung bean protein isolate has potential in a broad range of food applications from ice cream to sauces, according to a GRAS determination from Just Inc sent to the FDA in December 2016.

Just Egg Changed Their Ingredients
When Just Egg first came out and I tried it I liked it! I liked it a lot. I’ve used it to make many things, such as vegan egg sandwiches, omelettes, sausage biscuits, and more. I’ve used it regularly over the last couple of years. Recently, I started noticing that it seemed “different.” That was the best way that I could describe it, because I couldn’t put my finger on what it was that was different about it. To me, it didn’t taste the same as it had and the consistency had changed.
This past weekend, I happened to look at the ingredients list on the bottle and I immediately noticed that it had changed since I first started using it. I know, because over the last few years I have really mulled over ingredients lists and researched different things in products. Our food supply today is SO filled with toxic ingredients that have no place in food! I recognized ingredients on the list that were not there originally. So this morning I did a quick search and found that they indeed change the ingredients list, so that it was more “egg like.” I guess in their opinion it is more egg-like, but in my opinion it made it less desirable.

A study published in Atherosclerosis reviewed 14 studies into eggs and concluded that people observed eating high numbers of eggs had a 68 percent increased risk of developing diabetes.
