Now Im pretty well versed in gluten-free stuff, nut-free and low carb/low cal/ low fat but egg substitution Im still learning.

Ive been fortunate to have the TKW family help me out with this as they either themselves or have someone in their family with egg allergies and theyve taught me things to use in place of eggs and still have the recipe turn out awesome.

Through them, educating myself and research on the net Ive comprised a list of Egg Substitutes in Cooking and Baking that hopefully will help you out.

In a typical recipe for baked goods, eggs generally play one of two roles:

They act as a Binder. Meaning they are used to hold the recipe together. Or They act as a Leavening Agent. Essentially they are used in a recipe to help the food rise.

Ground Flax Seeds 1 Tablespoon Flax + 3 Tablespoons Water

Another vegan baking trick is to create your own egg using ground flax seeds and water. To do this, combine one tablespoon of ground flaxseeds with three tablespoons of water and stir vigorously. Let the mixture sit for around three to five minutes before adding to the batter.

This mixture is suitable for replacing one egg. So, if your recipe calls for two eggs, you will need to double this mixture to two tablespoons of ground flaxseeds and six tablespoons of water.

The fake flaxseed egg will work similarly to a regular egg in your cornbread recipe. As a bonus, your cornbread will get a little extra boost of nutrients thanks to the Omega-3, fiber, and protein content of flax.

Or try a more flavorful liquid than water. For chocolate treats, coffee or espresso is the best addition. “A fun trick that I love to do in homemade or boxed chocolate cake recipes is trade out the water ingredient for coffee! Before we discuss how to make eggless brownies, first, its highly important to study the purpose of eggs in baking that contributes to several factors, only then would you be able to select the best choice among the possible options to replace eggs with, without compromising the delicious taste and texture.

Bonus: Egg Wash Substitutes

Vegan substitutes for egg washes are one of the trickier things to get right. Usually, egg wash provides 3 things: stickiness , sheen and a golden-brown hue. There are a few different types of vegan egg washes that I like to use depending on the situation & what I have to hand.

  • This egg wash does provide a slight sheen & darkening but not super effectively

  • This one is my favourite. Thanks to the xanthan gum, this is thicker than just maple syrup + soy milk alone so it adheres to the dough a lot better. The bicarbonate of soda aids in browning.
  • 1 tbsp maple syrup + 3 tbsp non-dairy milk + 1 tbsp cornflour
  • The cornflour here helps to thicken up the glaze so it adheres but can make the glaze appear more matte.

The ratio is, for every egg replaced, 1/4 cup of the substitute is used, except for arrowroot, soy lecithin and agar agar. These egg substitutions for binding work well as substitutes for baking recipes.

    Eggs as Leavening Agents: If eggs are leavening agents, Buttermilk, Yogurt, Baking Soda, Commercial Egg Replacement Powder such as Ener-G can be used.

    Eggs for Moisture: If eggs are added for moisture, Fruit Juice, Milk, Water or Pureed Fruit can be used.
