Missing One Of Those Back
While we love a homemade dessert and pride ourselves on Mama’s recipes, there are times that call for a boxed mix. From cornbread muffins and pancakes to brownies and cake mixes, Southerners aren’t afraid of a little help from the likes of Betty Crocker. Often topped with homemade icing or embellished with flavorful add-ins, no one will even know the secret cake recipe they’re begging for wasn’t made from scratch.
Most boxed mixes only call for a few additional ingredients, which typically include water, oil, and eggs. Whether you don’t have the ingredients the box calls for on hand or you’re wanting to take your pre-packaged mix to the next level , we have you covered. With a little help from baking experts, we have a few ideas for what you can substitute on the back of a baking box, as well as some additions to turn out the perfect treat.

One of the things in creating recipes is to be mindful of food allergies and give options for those that want to make the dish but due to an ingredient that is key, they cannot due to an allergy.
Now Im pretty well versed in gluten-free stuff, nut-free and low carb/low cal/ low fat but egg substitution Im still learning.
Ive been fortunate to have the TKW family help me out with this as they either themselves or have someone in their family with egg allergies and theyve taught me things to use in place of eggs and still have the recipe turn out awesome.
Through them, educating myself and research on the net Ive comprised a list of Egg Substitutes in Cooking and Baking that hopefully will help you out.
In a typical recipe for baked goods, eggs generally play one of two roles:
They act as a Binder. Meaning they are used to hold the recipe together. Or They act as a Leavening Agent. Essentially they are used in a recipe to help the food rise.
Ground Flax Seeds 1 Tablespoon Flax + 3 Tablespoons Water
Another vegan baking trick is to create your own egg using ground flax seeds and water. To do this, combine one tablespoon of ground flaxseeds with three tablespoons of water and stir vigorously. Let the mixture sit for around three to five minutes before adding to the batter.
This mixture is suitable for replacing one egg. So, if your recipe calls for two eggs, you will need to double this mixture to two tablespoons of ground flaxseeds and six tablespoons of water.
The fake flaxseed egg will work similarly to a regular egg in your cornbread recipe. As a bonus, your cornbread will get a little extra boost of nutrients thanks to the Omega-3, fiber, and protein content of flax.
Note: Ground chia seeds work, too.

Try Adding Coffee To Boxed Baking Mix
Or try a more flavorful liquid than water. For chocolate treats, coffee or espresso is the best addition. “A fun trick that I love to do in homemade or boxed chocolate cake recipes is trade out the water ingredient for coffee! It gives the chocolate an extra depth of flavor, making it a mocha chocolate cake. You can even add in espresso chocolate chips to really take it over the top,” says author, stylist, and foodie Katie Jacobs of Styling My Everyday. For boxed brownies, Kate Wood also recommends replacing the water with coffee. “Even just adding in a teaspoon or two of espresso power . The coffee brings out the flavor of the cocoa!”
The Best Substitutes For Eggs In Cooking
While the need for an egg substitute often arises for baked goods there may be times when you need an egg in a savory recipe. The purpose of eggs in cooking is usually as a binding agent therefore, you dont need to worry about substitutes that help with leavening.
Below are my favorite egg substitutes to use in dishes like meatloaf or when making meatballs. These options are perfect for binding the ingredients without adding outside flavor.

- 1 tbspmaple syrup + 1 tbsp soy milk
- This egg wash does provide a slight sheen & darkening but not super effectively

Why Replace Egg Whites Anyway
While egg whites are good for many purposes, there are various reasons why someone would replace them. Here are some of the most common reasons:
- Egg Allergy: While egg allergies tend to be resolved in childhood, some may remain into adulthood. Eating egg whites is incredibly dangerous for those that have an allergy and can cause a bad reaction.
- Veganism: If someone follows a strict plant-based diet, then eating any animal product is out the question. This, of course, includes egg whites.
- Taste: In some cases, people simply dont like the taste of eggs, which includes egg whites. Or it could also be the case that your eggs are not fresh anymore.

Bread is one of the most popular dishes in the world and it is easy to make. However, making bread rise without baking powder can be a challenge. One way to do this is to add some dry goods such as flour, sugar, or pasta noodles to your dough before you knead it. This will help you form a more cohesive loaf and make the bread rise more easily.

Doing so may cause baked goods to become heavy and dense. Also, it may result in a nuttier flavor, so it works best in products like pancakes, waffles, muffins, breads, and cookies.

How To Decide On An Egg Substitute:
Different substitutes work better for different things. An egg has many diverse properties. In baking it acts as a binder, a leavening agent, and adds moisture. Simply put, an egg is what makes your cake spongy and well structured.
The most important property of egg will vary from recipe to recipe. Before picking what replacement to use, be sure its the best available. Especially when making an egg heavy recipe such as meringue.
If you want to try baking without eggs, then first find recipes designed specifically to be egg free. Vegan baking is a popular market, and with hardly any searching youre sure to find something to make your mouth water.
Once youve mastered the basics, you can begin substituting eggs in your favorite recipes.
Vinegar And Baking Soda
Mixing 1 teaspoon of baking soda with 1 tablespoon of vinegar can replace 1 egg in most recipes.
When mixed together, vinegar and baking soda start a chemical reaction that produces carbon dioxide and water, which makes baked goods light and airy.
This substitution works best for cakes, cupcakes, and quick breads.

Why Replace Eggs In Baking
There are multiple reasons eggs will need to be replaced in a recipe. The most common ones are-
Egg Allergy: Many infants and young children have an allergy to eggs. Most children outgrow them. However, there are some instances where the allergy remains throughout their adult life too.
Vegan diet: Some people choose a vegan diet hence avoid products like milk, meat, or eggs. Vegans mostly strain from consuming all animal products.

Purpose Of Eggs In Baking
Egg as Binding Agents: If eggs are binders in a recipe, it can be replaced with Arrowroot, Soy Lecithin, Flax-seed Mix, Pureed Fruits or Vegetables, Silken Tofu, Vegetarian Unflavored Gelatin Powder . The ratio is, for every egg replaced, 1/4 cup of the substitute is used, except for arrowroot, soy lecithin and agar agar. These egg substitutions for binding work well as substitutes for baking recipes.
Eggs as Leavening Agents: If eggs are leavening agents, Buttermilk, Yogurt, Baking Soda, Commercial Egg Replacement Powder such as Ener-G can be used.
Eggs for Moisture: If eggs are added for moisture, Fruit Juice, Milk, Water or Pureed Fruit can be used.
Can I Substitute Eggs With Butter
Butter on its own is not a great substitute for eggs. It contains a little too much fat. And all that fat melts in the oven, so if you skip the eggs and double down on butter, youll end up with a melty, chocolatey dessert closer to hot fudge sauce than a brownie.
Great! There are indeed a lot of options to replace eggs in brownies. But I want to save time from experimenting. What is the best no-hits-and-misses egg substitute in brownies?

The Function Of Eggs In Cake Mix
Before thinking about how to replace the eggs in a cake mix, it is important to know what the purpose of eggs is . What exactly do the eggs do when mixed into the batter?
Eggs actually play a lot of important roles in cake, the first being that they add structure. When the eggs bake inside the cake batter, the proteins in the cake coagulate, helping to create the overall structure of the cake.
Not enough eggs and the cake may be too soft and flat . Too many eggs and the cake will be tough and chewy.
Eggs also add to the overall flavor of the cake. The yolk of the egg has a good amount of fat which makes the batter taste rich and smooth.
Eggs add moisture as well since they are made primarily of water. This keeps the cake tender as I bake, preventing it from becoming too dry.
Eggs are responsible for adding nutrients to your cake mix as well. They are full of protein and healthy fats along with iron, vitamins and minerals. This definitely helps if you want to consider your cake mix healthy!
Now that you know the purpose of eggs when making a cake mix, you will be able to replace them in a smart and beneficial way, creating a perfect egg-free boxed cake mix.
Vegan Egg Substitutes For Baking
If you want to replace eggs in a dish like a quiche or an omelet, it is actually quite easy. You can just substitute in tofu in most cases. Add some turmeric and the tofu will even get a yellowish egg-like color. Chickpea flour also works great, especially for omelets and eggless scrambles. When it comes to vegan baking though, replacing eggs can be a bit trickier. Baking is like science, which means theres a specific replacement for each bake. In this guide, you can see which egg replacement suits your needs!

Egg Substitutes For Making Pancakes And How To Use Them
Aquafaba is a liquid you see when you open a can of chickpeas, and it makes an excellent vegan egg replacement in baked goods.
The thought of making pancakes without eggs is foreign to most people. After all, eggs help bind the pancake mix together. Without them, all youd have is a pan-full of mush when you try to get them out of the pan. The egg also helps make the pancake a bit fluffier and crispier and adds a good bit of nutrients and moisture.
Without eggs, would pancakes even be possible?
In fact, yes, they would. There are several other ingredients that you can easily use as binders in your batter instead of eggs. Some even make pancakes more delectable, adding new textures, colors, and flavors.
I think youll agree that its a long list of ingredients that can be used instead of eggs in your next batch of pancakes. The good news is that many of them also add a heaping of extra nutritional value. Vitamins, minerals, fiber, and healthy fats too!
Lets take a look at all of them a little more closely.
Ill also include the Pros and Cons of each and how much of each will replace one large egg.
