How To Make Classic Egg Salad

Easy Egg Salad Recipe – Egg Salad in 2 minutes

Begin by hard boiling the eggs. Place the eggs in a saucepan in a single layer, and fill the pan with enough cold water so that it covers the eggs by about an inch. Bring to a rolling boil over high heat, then remove the pan from the heat, cover, and let stand for 10 minutes.

Carefully pour out the hot water place the pan in the sink and run cold water over the eggs until the pan is lukewarm, 1 to 2 minutes. Drain and refill with cold water let stand until the eggs are room temperature, about 10 minutes.

Gently crack the eggs all over and peel under running water. Then dry the eggs and chop into 1/4-inch pieces.

Meanwhile, finely chop the herbs, celery, and scallions.

In a medium bowl, whisk together the mayonnaise, mustard, lemon juice, Worcestershire sauce, salt, pepper, and sugar.

Add the chopped eggs, celery, scallions, and parsley.

Using a rubber spatula, fold to combine. Taste and adjust seasoning, if necessary, then serve or refrigerate until ready to use.

If you refrigerate the egg salad, be sure to taste it again before serving and adjust the seasoning I find the flavors mellow out a bit after some time in the fridge.

There are many different methods of boiling eggs. Most cooks know how to boil eggs the old fashioned way. Simply put the eggs in a pot of water, boil it for 10-12 minutes, and then remove them from the hot water.

Thats exactly how I used to boil eggs, but they were often so messy and difficult to peel I found myself dreading it.

Then along came my air fryer. As soon as I discovered that I could get the same effect as boiling by air frying them, I was delighted.

This recipe for air fryer boiled eggs has made my egg game so much stronger. Follow the directions in the recipe and then put the eggs in a cold water bath for a few minutes. The peelings pop right off no trouble at all.

You can also use an Instant Pot or any other brand of electric pressure cooker. Choose whatever cooking process youre the most comfortable with.

Another thing you can do is replace some or all of the mayonnaise with Greek yogurt for a protein boost.

This egg salad is a great recipe to make when you just dont feel like cooking. We make this for cold lunches or an easy meal on the weekend and its a good alternative to Tuna Salad with Eggs.

And we also love a good egg salad sandwich during Lent!

You can make this boiled egg salad healthy by skipping the mayo completely from the recipe. We dont eat mayo often at home so most times I make the egg salad without it. This mayo-free egg salad is my kids favorite and it goes very well in sandwiches and roti rolls.

If you are wondering how to make this? Just use lots and lots of veggies as you would use for any other vegetable salad. Then add the boiled & chopped eggs to it. A dash of lemon juice, salt, green chilies & lots of fresh herbs is all that is needed. I also sprinkle some olive oil or avocado oil to flavor up.

This is so good inside the wraps or kathi rolls. I smear some green chutney or yogurt sauce over the rotis and then put this salad inside.

  • Mayo substitutions Greek yogurt, hummus, tahini.
  • Crunchy veggies celery, jicama, green onion, sweet bell pepper, spicy jalapeño.
  • Add more protein garbanzo beans, small cooked shrimp, diced chicken, bacon.
  • Herbs fresh parsley, fresh dill, fresh basil, rosemary.
  • Things that are salty diced pickles or relish, olives, chopped artichoke hearts, capers.

Things that I do not recommend adding are things with a lot of water or liquid. For example, tomatoes and cucumber. Youre better off topping your sandwich, salad, or bowl with these veggies.

Peel the hard boiled eggs by gently tapping them several times on a clean counter or cutting board, cracking them all over. Then gently peel the shells away from the eggs. If the shells are stubborn or clinging to the eggs, try peeling them under running water. Some eggs peel easily, while others can be frustrating. That’s just how it goes .

Use any one of these kitchen tools to quickly slice or mash them to make egg salad.

  • Add a dash of curry powder. There is one more ingredient that will give your simple egg salad a special zing, and that is a dash of yellow curry powder. Not only will the curry powder give your egg salad sandwich a gentle spicy lift but it will also give it a bit more color as well.
  • To mayo or not to mayo? You can substitute the mayonnaise in an egg salad sandwich with some ripe avocado if you do that you’ll need to add some vinegar or lemon juice for an acidic component, and add more salt than you would expect. Personally, I prefer my egg salad sandwich with a hefty amount of mayonnaise. That said, the amount of mayonnaise is completely a matter of taste.
