If the meat youre using is pre-cooked, such as diced ham or shredded chicken, you can mix it with the cooked vegetable mixture before layering it into the dish.
  • Starch: Like when making breakfast strata, sausage stuffing, and cream cheese French toast casserole, the bread should be slightly stale so it can soak up moisture. Crusty sourdough is FANTASTIC here. You can also use homemade artisan bread, a loaf of French bread, crusty baguette, biscuits, bagels or homemade bagels, or even day-old croissants . To make it gluten free, use gluten-free bread or potatoes.
  • Eggs, milk, & cheese: Whisk a dozen eggs with a little half-and-half or milk and stir in some shredded cheese. Like the vegetables and meat, use whatever cheeses you like best, such as sharp cheddar, pepper jack, feta, and/or smoked gouda.

    Anywho, this casserole is maybe the easiest thing ever to put together. There are so many versions out there, but this is the one I use and love. Its wonderful to wake up in the morning and have it ready to go straight into the oven. On Christmas, we often pop it the oven, then open some presents while it bakes.

    To get started making it, theres some bread. I dont use fresh bread from the bakery in this one, like I would a french toast casserole, because I dont want anything too firm or crunchy. I want the eggs and sausage to shine in here. I tend to use a regular loaf of bread, often of the sourdough variety because I love it. But really any should work just fine.

    Sausage and cheese are sprinkled over the bread and lets be honest, you cant go wrong with either of those. A full pound of sausage and two cups of cheese should be plenty, but if you feel the need for more you go for it!

    Then weve got eggs, milk, and some dry mustard, salt and pepper for flavor. The whole casserole is covered and stored in the fridge overnight. Baking it the next morning couldnt be easier!

    You may need to bake it for a little more or less time depending on your oven and how soft or runny you prefer the casserole to be. I dont really like it to be runny, but I also dont want it to dry out. To check it, use a fork or knife to stick in the middle and see how soft it still is. When its done, youll definitely be rewarded!

    Sausage Egg and Cheese Breakfast Casserole, or Christmas Casserole as its known at our house, is and easy to prepare recipe. Youve been busy with holiday cooking and want to feed the family, perhaps guests too, a great breakfast. This casserole can even be made the night before.

    Theres no heavy bread in this dish. After all, arent we still stuffed from Christmas dinner. Fluffy eggs, your favorite breakfast sausage and cheese. Cause we all love cheese right?!

    This breakfast casserole is one of my personal favorites. Us Southerners love our hot sauce too and I add a few dashes to my serving. Its so good! I occasionally make this when we are in the mood for a breakfast for supper kind of night. If you have leftovers, they re-heat beautifully in the oven the next day.

    I appreciate an easy to prepare breakfast after Ive spent days cooking. December also happens to be a very busy month overall with baking homemade goodies, decorating, and most likely shopping. There are trips to the post office, cards to write and send. I love it all but am ready for the New Year after December 25th rolls around.

  • Preheat oven to 350 degrees F. Grease a 8×8 inch baking dish.
  • Brown and drain sausage.
  • Whisk together milk, eggs, dry mustard and salt.
  • Mix in cheddar cheese, drained pork sausage and cubed white bread with eggs.
  • Pour into greased dish and bake for 30 40 minutes.

    Time needed: 1 hour and 10 minutes.

  • Brown Sausage

    Brown the sausage over medium-high heat. Remove from pan onto a paper towel lined plate to drain.

  • Sauté Vegetables.

    Add oil to pan over medium heat. Add onions and cook for 2 minutes. Add bell pepper and cook for about 5 minutes until tender. Add the spinach and cook another minute until wilted. Mix in the sausage. Set aside.

  • Mix

    In a large mixing bowl, whisk the eggs. Mix in the milk, mustard, salt, and pepper. Stir in the cheese.

  • Prep Pan

    Grease a 9×13 inch pan and place bread cubes in the bottom.

  • Assemble

    Spread the sausage mixture on top of the bread and then pour egg mixture on top. Sprinkle with salt and pepper and cover with plastic wrap and let refrigerate for 2 hours or overnight.

    Sausage: I use 1 pound bulk breakfast sausage

    Butter: use 1/2 cup melted butter

    Cottage Cheese: cottage cheese adds protein and body to the eggs, plus makes them extra cheesy!

    Cheese: shredded cheddar cheese is my favorite for this one, but you can use your favorite cheese.

    Other Ingredients: all purpose flour, baking powder, salt, ground black pepper

    Eggs: you need eggs, obviously! I use 10 large eggs

    X 13 Breakfast Casserole

    Loaded Breakfast Casserole with Sausage, Eggs, and Cheese

    This recipe is for an 8-inch x 8-inch baking dish but if you have a larger family or want it for a get-together, it is easily doubled and can fit in a 9-inch x 13-inch or similar size baking dish.

    To make a 9 x 13 breakfast casserole, follow these instructions.

  • Brown 1 pound breakfast sausage drain off excess grease.
  • In a large bowl, beat 8 eggs.
  • To the eggs, add 2 1/2 cups milk, 1 1/2 teaspoons dry mustard, 1/2 teaspoon salt, 1 1/2 cups shredded cheddar cheese, and 2 cups cubed white bread.
  • Pour into a 13 x 9 inch baking dish that has been sprayed with nonstick cooking spray.
  • Bake at 350 degrees F for 30 to 40 minutes.

    How To Make Sausage And Egg Casserole

    Start by greasing a 13×9 inch baking pan with cooking spray.

    Cut the bread into 1-inch cubes. If youre using soft sandwich bread, a chefs knife is best for this. If youre using a crusty white bread, a serrated knife is easiest.

    Then, crumble the sausage into a large skillet. Place the skillet over medium heat and cook, stirring occasionally, until the sausage is browned and cooked through.

    In a large bowl, whisk together the eggs, milk, salt, dry mustard, and cheese.

    If you dont have dry mustard, you can just leave it out. Its delicious either way.

    Place the cubed bread in the prepared casserole dish, followed by the crumbled sausage.

    Pour the egg mixture over the top. Most of the cheese will likely float to the surface. That is a good thing for making a cheesy top to the breakfast casserole!

    Cover the dish and place the breakfast casserole in the refrigerator overnight, or for at least 2 hours.

    When youre ready to serve it, bake the breakfast casserole for 4050 minutes at 350°F, or until the top is golden brown and the eggs are set in the middle.

    Top with parsley, if desired, and serve.
