This tasty spinach and eggs scramble is perfect for brunch. With lots of fresh spinach, onions, and parmesan, it’s incredibly flavorful!
Ready in about 20 minutes, it’s as easy as it is delicious. Even the leftovers are good!
This scramble may not look like much, but it’s delicious. I’ve been making this recipe regularly for over a year now. But I was reluctant to include it here because while egg scrambles are tasty, they are not very photogenic.
Today I just decided to go ahead and publish it. It’s so good, I don’t want you guys to miss out!
I first tried a veggie scramble several years ago at Carla’s Country Kitchen in the beautiful and scenic Morro Bay, California:
I especially loved the ratio of vegetables to eggs . And when I returned home, I decided to use spinach, simply because that’s what I had in the fridge.
This dish is so delicious, I’ve been making it regularly ever since. And just like in the restaurant version, I love the generous ratio of veggies to eggs.

The Secret To Getting A Frittata Out Of The Pan
Let the pan sit for five to 10 minutes once you take it out of the oven. The steam in the pan will slowly loosen the frittata as it rests. Then, run a rubber or silicone spatula around the edges to loosen.
If you’d like, flip the frittata upside-down onto a large plate, then onto a platter, so you can easily cut and serve it right-side up.
If that sounds like too much work, you can just serve it straight from the pan.

Scrambled eggs with spinach are a healthy and delicious breakfast. These cheesy scrambled eggs are fluffy and the addition of spinach makes the perfect scramble. This recipe uses mozzarella cheese, but it can be easily swapped with parmesan, cheddar, or even feta.
This scrambled egg recipe is such an easy way to make a healthy breakfast. But the end result is beautiful and feels fancy. This is a brunch-worthy recipe that’s easy enough to make in the morning before work but sophisticated enough to make for your loves. This is a dish I would double and make for my husband or mom.

This spinach scramble is creamy with the addition of mozzarella cheese. Add some crushed red pepper flakes for a touch of spice. And you have a delicious egg dish that winds up being the colors of the Italian flag.
How To Make Scrambled Eggs With Spinach And Feta Step By Step Photos
Chop about 4 oz. of spinach into smaller pieces . The amount of spinach in this recipe is VERY flexible. So use less if you have less, just use up what youve got! You can also skip chopping if youre in a hurry, but I like to chop because whole leaves can be a little stringy sometimes.
Crack four large eggs into a bowl, add a pinch of salt, and whisk to your liking. I like to have some ribbons of white and yellow in my scrambled eggs, but you can whisk more if you like a more even color.
Melt 1 Tbsp butter in a large skillet over medium heat, then add the chopped spinach. Sauté the spinach until it has wilted .
Push the sautéed spinach out to the outer edges of the skillet, then pour the whisked eggs in the center. Gently fold the eggs as the bottom layer solidifies, until the eggs are about 75% solid.
Fold the spinach into the eggs, then turn the heat off. The residual heat in the skillet will finish cooking the eggs without overcooking them or drying them out.
Finish off the eggs with 1 oz. crumbled feta, some freshly cracked black pepper, and a pinch of crushed red pepper.

Curried Eggs With Spinach

HEAT a 10 skillet over medium heat. ADD olive oil and onion. SAUTE until onions are translucent. STIR in garlic, cooking for a minute more. STIR in curry paste and tomatoes. ADD the water. BRING to a simmer and cook for 2 minutes. STIR in the spinach a handful at a time.
When the spinach has wilted and tomatoes have blistered slightly, carefully CRACK eggs on top of the mixture. SIMMER over medium/low heat.
COVER and COOK until the egg whites are set.
REMOVE from heat. GARNISH with salt, cilantro and lemon wedges. SERVE with toast, pita or your favorite cooked grains.

You bet they are. This recipe only has about 200 calories per serving. Eggs are not only delicious but also nutritious packing in a lot of protein and essential nutrients into that little shell.
For this recipe, you want to pull the eggs off the heat before they are completely cooked. While you grab plates and serve they will continue to set up and therefore not be overcooked.
They will stay deliciously creamy and with the addition of the Parmesan cheese, you will think they are way more decadent than they are.
The addition of the garlic takes these eggs from a breakfast dish to lunch and dinner for sure. The crushed red pepper flakes give that little tang that is so delightful on your tongue too. The amounts in our spinach and eggs recipe are meant as a guide only.
Sometimes, we have oodles of spinach. Others, not quite so much.
We also use free range village eggs. This dish is a celebration of the spinach and eggs combo. So only the best quality ingredients will do.
Extra ingredients include sauteed onion and salça . These are completely optional but they really boost the flavours of the dish, we think.
As you can see in the photo above, you will often end up with a kind of egg and spinach omelette as the whites of your eggs spread around the pan, fusing the ingredients together.

I eat scrambled eggs very often. Its one of those breakfasts that makes you feel energetic and good all day. The secret to a perfect fluffy egg is the way you cook the eggs. Its important to cook the eggs over a low temperature and slowly, using a spatula, scrape the bottom of the pan. Fold the eggs into themselves, and continue to do this until they are no longer runny. I also like to add a splash of milk to the eggs. This is optional, but adding the milk to the eggs makes them more fluffy and creamy. I added spinach and a combination of red and green onions..

These eggs will usually fill me up until around 1pm, and sometimes even longer. Theyre a great source of energy in the morning and keep you full for a good chunk of the day. If youre the type that has problems with hunger around 11, try these! The fats in the cheese and cream will be sure to help your stomach stay quiet until lunch time.
If needed, you can sub out the olive oil for coconut oil if youre wanting MCT oil.
Baked Eggs With Spinach
They key to great baked eggs with just-set whites and yolks that are still slightly runny and without getting a dry film across the top is to cover the eggs with cream plus a scattering of a good melting cheese also helps! Though you cant see it in the photo, the base of the ramekin has a layer of spinach at the bottom. Whenever you want leafy greens in baked eggs, you must wilt them first otherwise you will end up with watery eggs yuck!.
Use this recipe as a base to get as creative as you want! Mix and match other vegetables, line the ramekin with prosciutto or smoked salmon, or add a sprinkling of bacon bits!!
