Potato salad is a personal process, and there are lots of opinions out there as to what makes it perfect or the best. The recipe below is our version it includes everything we love, but remember that its your potato salad, so add what you like!
Celery and Pickles The celery adds a lovely crunch and our house isnt stable without dill pickles in the refrigerator so adding them is a no-brainer for us. If you dont like pickles in potato salad leave them out .
Red Onion I love the sweetness and crunch of red onion in this. To make sure that the onion doesnt overpower the salad with raw onion flavor, I deflame the onions. Its a simple process, simply add cool water to chopped onion and set aside for 10 minutes. The time in the water takes the raw edge off the onion.
Hard-Boiled Eggs Maybe its how we were brought up or what were used to but, potato salad without eggs is missing something. Hard-boiled eggs add texture and extra creaminess.
Fresh Herbs The most common herbs are parsley and chives, but dill, cilantro, and tarragon all work well. In our recipe below, we use both dill and parsley. Experiment for yourself to see what you love. Add a tablespoon at a time then taste. Also, remember dill and tarragon are a little stronger than other herbs so add accordingly.
How Far Ahead Can You Make Potato Salad
Potato salad can be served right away, or refrigerated until ready to serve. Its best served the same day its made, but leftovers will keep for about 3 to 4 days .
You can also boil the potatoes and fry the bacon a few days ahead. Keep them refrigerated separately and assemble the salad when ready to serve.
Potato salad does not freeze well, and we dont recommend it.
If you are using Russets and not Yukon Gold potatoes, peel them first, then cut them into 1-inch pieces for cooking.
The bacon is entirely optional, feel free to skip it, or experiment with other ingredients. My dad likes adding minced carrots and chopped hard boiled egg to his potato salad.

So when I stumbled on this no-peel Best Ever Red Potato Salad in an old church cookbook, I knew I had to try it.
Similar to my familys German Potato Salad, it has hard boiled eggs both inside the salad and on top. It also sports the addition of red pepper, dill pickle relish, celery, and green onions, plus a creamy mayonnaise dressing made with celery salt.
And best of all, theres no need to peel the potatoes, making it relatively quick and easy.
The combination of flavors and textures is a true delight. I served this at a cookout recently and it went WAY too quickly!

Is It 3 Minutes For A Soft Boiled Egg

Bring water to a boil in a pot. Place the eggs in the water, allowing them to soak up any excess water, and return the water to a boil after it has returned to a boil. For 3 to 4 minutes, boil the water. Cook the pasta in hot water until al dente, then transfer it to the colander, cover, and cool under cold running water for at least 15 minutes.
When it comes to perfectly boiled eggs, the key is to leave the pan uncovered and bring the water to a rolling boil on a regular basis. Bring the water to a rolling boil before turning off the heat and covering the pan. Allow the eggs to soak in hot water for 10-12 minutes, depending on how cooked you want your eggs to be. The eggs should be removed and cooled in an ice bath after they have been thoroughly cooled. With this method, you can ensure that your eggs are perfectly cooked every time.

Buttery golden potatoes are my favorite here, tough youll find me making this with new red potatoes whenever they are in season as well.
- 4lbgolden potatoes- organic
- 6scallions-thinly sliced
- 8large hard boiled eggs
- 3/4cupextra virgin olive oil + more to taste
- 1/3cupred wine vinegar+ more to taste
- 2tspsea salt+more to taste
- 1pinchfreshly ground black pepper
- 1bunch fresh dill -roughly chopped
- 1/2cuppine nuts -toasted
- 1 -2tspred pepper flakes-or to taste
- 1/3 cuponion chives- chopped
What Kind Of Mayo To Use
Just like the potatoes, not all mayonnaise is created equal! Ive used Miracle whip, Kraft, Hellmans mayonnaise, but the one I prefer currently is canola oil mayonnaise, made by Spectrum.
This mayonnaise is thick, creamy and blends well. Never fails. But if anyone has any other preferences on which mayonnaise to use I would love to know and try other kinds!

The Best Potatoes To Use
Small, waxy, and thin-skinned potatoes are best for potato salad. Small yellow, white or red potatoes are perfect . They are quick-cooking, and since they are already small, theres no need to chop them before cooking them.
Leave the potatoes whole. Whole cooked potatoes maintain more of their flavor and natural sweetness. Were also partial to the texture of potatoes when they are cooked whole compared to chopped.
If you dont have small, waxy potatoes available, other potatoes will work in their place the texture will be slightly different. We try not to use russet potatoes since they tend to fall apart. If thats all you have, dont worry. Chop them before cooking they are much larger and take a long time when cooked whole.
How To Chop Fresh Dill Weed For Potato Salad
We have a few picky eaters in the family who dont care for anything crunchy in their potato salad. Personally, I love adding celery and green onion for extra texture and flavor.
Theres also some debate in the family over pickles vs. dill weed. Again, the crunchy factor comes into play. However, dill weed adds such a delightful dimension to the potato salad flavor.

To make the dressing, combine mayonnaise, yellow mustard, garlic powder, salt and pepper in a large bowl and mix well.

Cut the potatoes into similar size chunks and cook with the skins on in boiling water seasoned with 1/2 teaspoon of salt. While the potatoes are boiling, hard-boil two eggs and dice the celery and onions.
When the potatoes are fork-tender, drain them into a colander and let them cool to room temp. Dice the potatoes into bite-size pieces leaving several of the potatoes with the skins on then add them to a large bowl along with the celery and onions.
When the eggs are hard-boiled and cooled, dice them as well and add them to the bowl.
Fold in the mayonnaise , dill, pepper, mustard, ground mustard and a pinch of salt.
Stir in the bacon and vigorously blend the potato salad smashing smash some of the potatoes while leaving others intact.
Tip: If you have the time, I recommend frying your own bacon, but you can also use real bacon bits. Crisp them in the microwave for 8-10 seconds before adding them to the salad.
Taste and add salt to taste then garnish with dill and chill it for at least an hour or two before serving. You can even make this Potato Salad the day before.

These are hard-boiled eggs that had been cut in half and the yolk mashed and mixed with other stuff before putting back into the halves. The main ingredients for the yolk paste are mayonnaise and mustard.
I have a recipe for this, you may want to check that out. There are many variations of this recipe that you can also apply in this potato salad version.
How To Make Hard Boiled Eggs For Potato Salad
Place your eggs in a large pot and cover with cold water. Bring to a boil over medium-high heat.
Then cover, and remove from heat. Set aside for 8-10 minutes. The eggs will continue cooking in the hot water even though theyre not over heat.
Drain and cool in ice water. When the eggs are cool enough to handle, theyre ready to peel.

The ingredients in this recipe are kept simple and basic.

So, whats in potato salad? Obviously, potatoes but my version has a few little sneaky ingredients that take it to the next level.
- Potatoes: I find most potatoes work fine. Starchier potatoes will work out softer, while waxy potatoes will keep their shape better. Simple red skinned potatoes have qualities of both and are my favourite.
- Eggs: Its just not potato salad without hard boiled eggs. They add another texture and extra flavour.
- Spring onions: You may know them as green onions too. They add a mild onion flavour and a crisp texture.
- Mayonnaise: This salad is lighter, using a light whole egg mayonnaise.
- Sour cream: Sticking to the lighter theme, I use a light sour cream. Mixed with the mayo, it adds a slight tang and balances the much sweeter mayonnaise out.
- Wholegrain mustard: Just a couple of teaspoons adds a little mustard kick and a slight sweetness.
- Prosciutto: prosciutto is crisped up in the oven, then crumbled and scattered over the top. It adds saltiness, flavour and crunch.
The prosciutto and mustard are really what set this dish apart. Both impart umami and make this seriously the best potato salad youll ever try. Big call? Maybe but the fact that this always disappears quickly tells me others agree.
