Yes, Id buy this Just Egg vegan egg substitute again and I actually purchase it regularly, especially since the price has gotten a little more reasonable than when it first came out. Even though I still crave and mostly make tofu scrambles, I like this as a change of pace and its super easy for a quick, filling protein to cook up in about 5 minutes when Im feeling lazy. How much Just Egg to use is equivalent to using real eggs. A large egg is about 3 tablespoons, give or take. For most recipes simply substitute 3 to 4 tablespoons of Just Egg for each large egg. For each extra-large or jumbo egg called for substitute 4 tablespoons of Just Egg.
In recipes that need either a more eggy flavor or a stronger structure, use 4 tablespoons of Just Egg per egg. This would apply to brownies and cookies that youd like to be crisp but dense. When a lighter texture and milder flavor are desired, as in lighter cakes or puffier cookies, use 3 tablespoons of Just Egg for each egg.

I will tell you, I almost didnt write this recipe post because to me it seems a little too simple. My son was visiting and I made this dish for a lazy Saturday morning breakfast. He asked me if this recipe was on the blog.
I laughed and said of course not! Its nothing special! Its just like making a breakfast scramble with real eggs, except that you use Just Egg instead. Anyone who knew how to scramble a chicken egg could scramble Just Egg as well.

I did some research on this and found that while gluten is not present in the product, it is present on shared equipment. The company does have allergen control procedures and cleaning protocols in place. They hope that as they grow they can have lines and perhaps facilities dedicated to their products to avoid cross-contamination.
Please note, Just Egg contains a small amount of soy-lecithin so it is not soy-free. Soy lecithin doesnt bother me the same way tofu or edamame does but if you have a true soy allergy, its best to avoid Just Egg.
