Potential Benefits Of Just Egg
Just Egg exists as more than simply a zero-cholesterol egg option. “It’s great that plant-based eggs are available to those who are vegan or for those with egg allergies or intolerances,” Ehsani says.
From a nutrition standpoint, Caspero gives Just Egg and all plant-based eggs a strong thumbs-up: “There are health benefits that come from swapping out higher-fat animal products and swapping in heart-healthy plant foods. While whole plant foods will always be a gold standard for me, I love the convenience of grabbing items like Just Egg for breakfast instead of an egg every so often.”
For omnivores, this doesn’t mean you have to swap out eggs completely, but adding in other protein-rich foods, like mung beans and tofu, is a good way to incorporate plant-protein diversity, Caspero continues. If you don’t have an egg allergy or aren’t vegan, you could put this mindset into practice by alternating Just Egg and regular eggs.
Plant-based eggs also offer another benefit beyond personal health: Environmental health. The egg industry has made strides to reduce water use and greenhouse gas emissions, but producing eggs still uses more resources than growing most plants. Many prominent animal organizations, including the Humane Society, are also worried about the treatment of chickens in production facilities.

What Is The Just Egg Made From
JUSTs hotly-anticipated product is a vegan, liquid egg crafted from ingredients like mung bean protein isolate. The versatile pulse hails from Asia and packs a serious protein punch: a single serving of JUST Egg provides a hearty 5 grams of plant-based protein.
Along with the 4,400-year-old mung bean, JUST Egg contains vegan ingredients like soy lecithin, canola oil, and onion puree. Turmeric extract gives the product its authentic yellow color. Stocked in BPA-free plastic bottles in the refrigerator aisle, youd be forgiven for mistaking this product for a thick banana shake. However, we dont recommend topping with whipped coconut cream. JUST Egg is considerably more appetizing when scrambled. Or indeed when made into French toast, quiche, omelets, egg patties or in any dish you would typically use blended chicken eggs. The company provides recipes and cooking tips on its website.
What makes this GMO-free product unique is that it is ready prepared and can be poured directly from bottle to pan. This differs from other vegan eggs, which come in powder form and require some assembly. JUST Egg doesnt require whisking.
How Much Just Egg Equals One Egg
How much Just Egg to use is equivalent to using real eggs. A large egg is about 3 tablespoons, give or take. For most recipes simply substitute 3 to 4 tablespoons of Just Egg for each large egg. For each extra-large or jumbo egg called for substitute 4 tablespoons of Just Egg.
In recipes that need either a more eggy flavor or a stronger structure, use 4 tablespoons of Just Egg per egg. This would apply to brownies and cookies that youd like to be crisp but dense. When a lighter texture and milder flavor are desired, as in lighter cakes or puffier cookies, use 3 tablespoons of Just Egg for each egg.

I will tell you, I almost didnt write this recipe post because to me it seems a little too simple. My son was visiting and I made this dish for a lazy Saturday morning breakfast. He asked me if this recipe was on the blog.
I laughed and said of course not! Its nothing special! Its just like making a breakfast scramble with real eggs, except that you use Just Egg instead. Anyone who knew how to scramble a chicken egg could scramble Just Egg as well.
He gave me a strange look before reminding me that he , had never actually scrambled an egg in his life. Not because he didnt know how to cook but by the time he was out of the house and making his own food, he was definitely not scrambling or even eating eggs. Good point!

Why Buy Vegan Eggs
The benefits of opting for a plant-based Benedict range from improved health to reduced carbon emissions.
Healthwise, new research has shown that eggs are not good for us, which contradicts the egg industrys widespread claims. Chicken eggs are high in cholesterol, with a single egg containing 373mg of the substance, which has been linked to health conditions such as heart disease and stroke. To put this in perspective, thats more than twice what youd find in a Big Mac. On the other wing, the JUST Egg is cholesterol-free.
Research into the health benefits of eggs is increasingly showing that their consumption is linked to conditions such as heart disease and diabetes. A study published in Atherosclerosis reviewed 14 studies into eggs and concluded that people observed eating high numbers of eggs had a 68 percent increased risk of developing diabetes.
Environmentally speaking, chicken eggs require considerably more land, more fuel, more water and more financial input than vegan counterparts.
According to publication The New Food Economy, a box of a dozen eggs requires four pounds of feed, 636 gallons of water, and a discomforting amount of antibiotics to produce.
The Department of Health and Human Services found that it was not an isolated incident and there is no telling how many other egg farms have followed the same unethical practice.
