This is how we make JUST Egg.
  • Preheat a non-stick pan over medium heat. Cook the onion and peppers for 4 to 5 minutes or until slightly softened.
  • Reduce heat to medium-low. Pour the Just Egg into the pan, and let stand for a few seconds. Using a silicone spatula, start to scrape the egg away from the edges of the pan toward the center, similar to scrambling chicken’s eggs.
  • When the JUST Egg is almost fully set and curdled, add the cheese and chopped baby spinach. Toss and cook for 1 to 2 minutes until the greens are wilted and cheese melted. Serve hot.
  • Top tip! Don’t over-cook JUST Egg. Once it’s fully “set” and clumping, you’re ready to eat! We like it best when there’s still a slight creaminess to the scramble.

    Yes, Id buy this Just Egg vegan egg substitute again and I actually purchase it regularly, especially since the price has gotten a little more reasonable than when it first came out. Even though I still crave and mostly make tofu scrambles, I like this as a change of pace and its super easy for a quick, filling protein to cook up in about 5 minutes when Im feeling lazy.     In recipes that need either a more eggy flavor or a stronger structure, use 4 tablespoons of Just Egg per egg. This would apply to brownies and cookies that youd like to be crisp but dense. When a lighter texture and milder flavor are desired, as in lighter cakes or puffier cookies, use 3 tablespoons of Just Egg for each egg.

    I will tell you, I almost didnt write this recipe post because to me it seems a little too simple. My son was visiting and I made this dish for a lazy Saturday morning breakfast. He asked me if this recipe was on the blog.

    According to Medical News Today, Mung beans are a type of pulse, which means they are an edible seed of the legume plant family.

    Similar to all pulses, mung beans are nutritionally balanced. They contain vitamins, minerals, and beneficial enzymes, making them an excellent part of a healthful diet.

    According to a 2014 review, evidence suggests that mung beans may have several potential health benefits, including:

    • Antioxidant effects. Research shows that several compounds in mung beans demonstrate antioxidant activity.
    • Antifungal and antimicrobial activity. These include some against the Helicobacter pylori bacteria that causes stomach ulcers.

    Is Just Egg Gluten

    I did some research on this and found that while gluten is not present in the product, it is present on shared equipment. The company does have allergen control procedures and cleaning protocols in place. They hope that as they grow they can have lines and perhaps facilities dedicated to their products to avoid cross-contamination.

    Please note, Just Egg contains a small amount of soy-lecithin so it is not soy-free. Soy lecithin doesnt bother me the same way tofu or edamame does but if you have a true soy allergy, its best to avoid Just Egg.
