Tips For Poached Egg Success
Use fresh eggs for poached eggs. Older eggs whites separate and become more viscous creating more wispy whites when cooked in the water.
Strain the eggs first. Over a small bowl, crack the eggs into a fine sieve or strainer to drain off the watery part of the whites. Doing so creates less wispies as the eggs cook in the water. Then, gently pour the eggs into the water instead of cracking them into the water. This helps them hold their shape more.
Make a vortex. Or not. If youre cooking a single egg, feel free to swiftly stir the water into a funneled vortex and gently pour the egg into the middle. The theory is the swift circular motion folds the eggs whites upon themselves. This method works for single eggs, but not if youre cooking more than one, and after years of cooking poached eggs, we dont bother with it anymore.
Simmer dont boil. More importantly than creating a vortex is the temperature of your simmer. Cook your eggs in a gentle simmering pan or pot of water, not boiling, with 1 tablespoon of white or apple cider vinegar. A saucepan or skillet work equally well, so long the skillet is filled by at least 2 inches of water.
Skim the scum. As the eggs cook, use a fine sieve to skim the water of the wispy whites and foam.
Can You Poach 2 Eggs At Once In The Microwave
Yes, 2 eggs can be poached in the microwave at once. To poach two eggs at the same time in the microwave, you will have to use a quart sized microwave safe container.
How do you poach more than one egg in the microwave? Fill the container with 2 cups of water to give enough room for the eggs to cook evenly. Microwave the water for 1 minute before adding the eggs, then nuke for another minute or until the eggs are cooked to your desired doneness.
While poaching more than one egg in the microwave, you will have to add the eggs to the bowl with very hot water. Microwave for 30 seconds on high to give a little boost to the water and the eggs
After removing the bowl from the microwave you should cover with a lid and allow the eggs to carryover cook for 1 minute.
Check the firmness of the whites of the eggs just by using a spoon to lift it gently. You can heat the poached eggs for 15 seconds more if whites are still very runny and allow it to sit for 30-45 seconds more to get the best results.
Using enough water will allow you to transfer the first egg to another bowl if you want to strain the second egg separately. Season and serve, both eggs should be cooked to the same consistency and be ready to eat.

Helpful Tips To Microwave Poached Eggs
Use a coffee mug, not a teacup. The mug needs to be deep enough that you can cover the egg by 1 inch of water with a couple of empty inches of space above the waters surface. This gives the water room to boil without overflowing in your microwave. If you dont have that much room in your mug, use a bigger one. Ive used both 6- and 8-oz mugs without problems, as well as 900 and 1200 watt microwaves.Dont forget to poke a small hole in the yolk. Using the tip of a sharp knife or a toothpick to make a tiny hole in the yolk allows steam to escape and keeps your poached egg from superheating and bursting. Remember, youre just poking focus on piercing the skin of the yolk without jabbing too far into it.
Covering with an actual plate is not optional. Paper towels or paper plates arent heavy enough and will allow steam to escape, which prevents the water from reaching the temperature needed to poach the egg.Check it carefully. Dont slosh the cup around when you check if the egg is done its going to be steamy in there. If the whites are still runny, microwave it for another 10 seconds and check again. Repeat until youre happy with how it looks.

Tips For The Perfect Poached Egg
Your eggs arent quite done when the microwave dings. If you want ideal results, youll want to do a couple of things before you put them on your noodles.
- Let your egg rest. If you want your whites to cook all the way through, let the egg sit in the hot water for a minute. This will also make the yolk thicker and gooier instead of thinner and runnier. This step is purely optional. If you like a runnier yolk, its perfectly fine to scoop your egg out the moment its done microwaving.
- Dry your eggs. Poached eggs are full of lines and crevices that retain water after theyre cooked. Depending on your recipe, you might not want all this extra water. Set your egg on a paper towel for a minute and gently dab it dry. This isnt necessary if youre making a brothy, soupy recipe. But if youre making a drier recipe, dried eggs will tend to work better.

Why Did My Poached Egg Explode In The Microwave
Poached eggs can explode in the microwave because the liquid inside the eggs boils while being trapped inside the membrane, or the water superheated causing an explosion.
Superheating is a common cause for concern when microwaving liquids. The surface tension traps air pockets underneath the surface, when the strain is broken the liquid can boil vigorously causing an initial eruption or explosion.
When microwaving poached egg, you should be careful as it can be dangerous. This risk can be mitigated by keeping the cooking time to a minimum.

When I worked the line at Jasper White’s Summer Shack in Cambridge, Massachusetts, we made poached eggs to order in the microwave. The technique yields perfect silky, firm whites and runny, warm yolks every time.
To replicate this restaurant trick at home, fill a 1-cup microwaveable bowl or teacup with 1/2 cup water. Gently crack an egg into the water, making sure it’s completely submerged. Cover with a saucer and microwave on high for about 1 minute, or until the white is set but the yolk is still runny. Use a slotted spoon to transfer the egg to a plate.

With a scattering of sea salt and a drizzle of hot sauce over the top, it is the easiest way to ensure lunch envy in my colleagues.
I buy organic local eggs where possible. In the supermarket, look for free-range or organic eggs and peep to the back of the shelf for the freshest cartons. When it comes to poached eggs, you’ll get the best results from freshly laid eggs, so bear that in mind.
