The first challenge that I faced was to make the liquid vegan egg with simple, accessible, and nutritious ingredients.
I settled on some of the components that Ive used for scrambles and egg-like dishes before: tofu , chickpea flour, nutritional yeast, and black salt.
Tofu gives the liquid egg its protein, as well as some of its texture and strength.
Chickpea flour helps to bind the mixture together. It also contributes protein, as well as some savory flavor. In fact, Ive used chickpea flour for a breakfast scramble that has no tofu at allits soy free.
Black salt, which is also called kala namak, has a high sulfur content. For this reason, it also has an eggy flavor and scent. Its not mandatory for this recipe if you cant find it.
However, you can order it online, and its a handy ingredient to have at home for any plant-based dish that is inspired by a traditional egg dish.

My first batch ended up a most glorious pancake! Unlike a lot of those who have commented, Im not going to complain about this. I went back to make sure I followed the directions except for not having kala namak and using TJs Unami instead as well as using Not Milk because I dont do soy. Decided to thin it out with more liquid, cut back on both the baking powder and the starch by about a quarter of the measurement. Viola!
FYI this is almost the same recipe I use for gravy just a lot more milk.

Love the recipe! For those looking for a more scrambled eggy texture: if you dont mind tofu, I recommend making tofu scramble however you like it and then pouring the mung bean egg over it near the end. Best of both worlds.
