Chorizo Potato And Egg Breakfast Burritos
When ready to serve, add potato/chorizo mixture to plate and top with fried egg. Garnish with shredded cheese, sliced green onion and some chopped cilantro. For the scrambled egg version: Mix a couple eggs together in a bowl as you normally would for scrambled eggs. Add to skillet with potatoes and chorizo and cook, stirring, until eggs are cooked.
After it is cooked through, about 8 minutes, place sausage on a paper towel lined plate and allow fat to absorb . Cover with another paper towel and blot the sausage. Saute onion and jalapeno in oil for a few minutes until softened. Mix eggs in a bowl. Add eggs to pan with onion and jalapeno and cook until scrambled.
Add the onions and spices and saute until translucent and soft, about 5 minutes. Add green chilies and chorizo to the pan and stir to combine. Let the chorizo brown, about 4-5 minutes. Reduce heat to medium and add in the sweet potato and stir to combine. Pour in 1/4 cup of water and cover to steam the potatoes. This will take about 10 minutes.
Let bottom of potatoes become crispy before flipping. Add in diced onion, pepper, garlic and Texas Pete Dust. Cook for another 5 minutes until onions and pepper start to brown. Stir in chorizo and cook for an additional 10 to 12 minutes or until crispy. In a medium bowl, combine eggs, 12 tsp of salt and Texas Pete Mexican Style Hot Sauce.
Serving And Storage Instructions
There are many ways to serve chorizo and eggs. One of my favorites is making it into a tortilla wrap. However, you can enjoy it with rice or bread, such as dinner rolls and white bread.
You can store the leftover chorizo and eggs in an airtight container in the fridge for about a week, then reheat it when you feel like serving it for breakfast or lunch. Another option is to store it in a freezer-safe container and freeze it for up to two months. Yaaay for freezer-friendly meals!

Mexican chorizo comes in a casing and has to be taken out of the casing before it can be cooked. It then looks more like ground sausage.
Spanish Chorizo is cured and hard spiced sausage. The skin can be peeled off and the sausage is cut into slices. Portugues chorizo is the same consistency. Spanish is easier to use because its cured and doesnt need to cook much.
Other chorizo varieties exist all around the world, such as the Goan Pork Chorizo in India. Those can be used in this recipe too.
What Is Spanish Chorizo Vs Mexican Chorizo
Spanish chorizo and Mexican corizo are indeed different flavor profiles, and they arent necessarily interchangeable.
The Spanish version is smoked and the smoky flavor of the sausage is enhanced with liberal use of smoked paprika. This means it does not need to be cooked like the fresh ground version typical of Mexican chorizo.
The Mexican version is fresh, raw pork which is typically seasoned with vinegar and a variety of chile peppers. Mexican chorizo can be quite complex with the brighter spiciness of chile peppers that are not smoked.
They are both excellent however and if your dish calls for Spanish and all there is in the store is Mexican, use it! You will end up with a different dish but it will still be a robust flavor-filled dish.
Mexican chorizo is usually made with fresh pork and usually needs cooking before eating. While similar to Spanish chorizo, it contains spices native to Latin America.

Our recipes with chorizo use both Spanish chorizo and Mexican chorizo. The first thing you need to know is that Mexican style chorizo is very different to Spanish style chorizo.
Mexican chorizo is nearly always a softer sausage that is fresh, so it must be cooked. It is meant to be taken out of the sausage casing and crumbled up a little bit before it is cooked.

What Kind Of Chorizo Should I Use
In this recipe, we use cured chorizo sausage. This is the type of chorizo that you can slice and eat. It usually comes wrapped tightly in a thin skin. Sometimes it is edible, but other times it is very chewy. If in doubt, remove the skin.
If you have some fresh chorizo sausage on hand, you can still make this recipe. Simply remove the casing before you crumble and cook it. Also, make sure that it is fully cooked before you add the eggs. Your scrambled eggs will turn a wonderful dark red color if you use fresh chorizo.

If You Can’t Find Mexican Chorizo
Chorizo may not be available where you are. We have a simple recipe for chorizo that can be made in the home.
Grind one pound of pork, not too fine. Add 1 teaspoon of salt, 1 tablespoon red chile powder mash 1 large clove of garlic very thoroughly with 2 tablespoons of apple cider vinegar, add to the meat and mix well.

This chorizo and scrambled eggs recipe couldnt be simpler. Its also one of our favorite meals. We make it for breakfast and even dinner.
Start by removing fresh sausage from the casings. Add the raw sausage to a hot pan and cook until the fat renders and the sausage is browned. As it cooks, use a spoon to break it into pieces.
When the sausage is cooked, check the pan. If theres lots of rendered fat, consider removing some. Some fat is a good thing. It has lots of flavors! Too much, though, and the eggs will be greasy.
Now for the eggs weve talked about scrambled eggs before. For the best scrambled eggs, you want to use medium-low heat. If the pan is very hot from cooking the sausage, wait a minute or two before adding the eggs.
When the eggs are cooked, serve the whole dish family style with fresh lime, cilantro, a sprinkle of salty cheese , and warm tortillas.
