While egg rolls are related to Chinese spring rolls , theyre quite different.

A traditional spring roll is much thinner and more delicate than an egg roll. Egg rolls use a thicker wrapper or skin that resembles a sheet of pasta and fries up into a hearty, bubbly, crunchy shell. They are also about double the size/thickness of a spring roll.

In recent years, Ive noticed Chinese restaurants opting to serve spring rolls rather than egg rolls, but before that, you probably only saw crispy spring rolls show up on dim sum carts!

Making your own Egg Roll Wrappers is easier than you might think! Though I wasnt able to find any specific store-bought gluten-free egg roll wrappers, there are a few options you can use to make your own at home.

One of the easiest ways is to get a gluten-free egg roll wrap mix. This mix comes with directions on the packaging for how to create the wrappers, step by step. The ingredients found in this product include brown rice flour, sorghum flour, non-GMO cornstarch, potato starch, xanthan gum, potato flour, sugar and salt.

Youll need some other items such as warm water and oil . With these items and the instructions given in the package of mix, youre all set! Make sure you knead the mix on a clean surface until its flexible and shiny.

Once thats complete, let it sit for 15 minutes before rolling out your wrappers using a rolling pin. Finally cut them into whatever shape works best for your recipe! With that youll be ready for making delicious homemade egg rolls with all natural ingredients tailored just for you and your family.

How To Roll Egg Rolls

The process for how to roll egg rolls is easy once you get the hang of it. Most important is ensuring that all of your edges are completely sealed up so that when you start to fry them, your filling stays put and no oil seeps inside. That might take some practice, so go slow as you learn so that you dont inadvertently leave any gaps behind.

How to Wrap an Egg Roll in 5 Steps

Step 1: Place a wrapper on a flat surface in front of you with pointed edges on bottom and top so it looks like a diamond.

Step 2: Place two to three tablespoons of filling on the bottom third portion of the diamond.

Step 3: Roll the bottom corner up and tuck it in under the filling. Flatten the wrapper on either side of the filling to remove air pockets.

Step 4: Fold the left side of the wrapper in toward the filling, followed by the right side of the wrapper.

Step 5: Lightly beat an egg to make an egg wash. Brush a thin layer of egg wash onto the top, unfolded part of the wrapper to make it slightly sticky, then start to roll the wrapped portion with the filling up toward the top. Roll tightly, but use a gentle touch so as to not tear the wrapper as you go. Place wrapped egg roll seam-side down on a baking sheet and move on to your next one.

Take the corner of another wrapper, and brush it with egg wash . Place the egg washed patch over the hole. It should stick. Be sure to make the patch large enough to have some margin around the hole!

A way to firm up wraps made from egg whites is to add 1/4 teaspoon of xanthan gum to the mixture.

Its not easy to dissolve xanthan gum in egg white mixture, so thats why I prefer to make smaller 8-inch wraps and not add any gum as a binder.

How To Make This Step By Step

Step One: Heat a non-stick pan over low to medium heat with a small amount of oil, cooking spray, or butter.

Step Two: Separate the eggs. If you are using whole eggs, you will need to separate the egg whites from the yolk. There are two ways to do this below. If using egg whites from a cartoon, just skip to step 3!

Method One: Crack the egg over a bowl or blender just enough so you can pry the egg open. Slowly open the shell and rock it from one side to the other to keep the yolk in the shell and push the egg whites into the bowl. Continue this until you have gotten most of the egg whites out. Store the egg yolk in a jar for use in other recipes later!

Method Two: Crack the entire egg into a bowl or blender. Take an empty plastic water bottle and position it upside down over the bowl. Squeeze the bottle so most of the air is dispelled, then gently place the rim of the water bottle on the egg yolks, and release your grip allowing air to come back into the bottle. When the air returns to the bottle, it will also suck the egg yolk back into the bottle with it. Repeat with as many egg yolks as you want and then store the egg yolks for use in other recipes.

Step Three: Add the super fine almond flour and egg whites to a blender and blend until fluffy and well combined. Its critical that the almond flour and eggs are mixed thoroughly so there arent any clumps. You may also add salt and pepper if you like .
