Tips To Making This Eggs Potatoes And Chorizo Breakfast Skillet Recipe
I only have a few tips to making this eggs potatoes and chorizo breakfast skillet recipe. My best tip is to use a 25cm cast iron skillet. A cast iron skillet heats evenly and is also oven safe, which is important, as we need to melt the cheese under a grill.
The potatoes need to be cooked enough so that a skewer meets a little resistance when testing the potatoes, but the potatoes must remain firm enough to stay in one piece when diced.
I like to cook the potatoes skin on, let them cool down, peel them, and put them in the fridge overnight to firm up more.
Like our other chorizo breakfast dishes, you want to use the soft Mexican chorizo, which has to be cooked before eating. The firm Spanish-style chorizo can also be used, but take care not to over-cook it as it tends to go hard.
Monterey Jack cheese is a must, otherwise a young cheddar cheese will work. For the hot sauce, our current favourites are Tapatio Salsa Picante and Cholula Original Hot Sauce.
What Is Soy Chorizo
In the video I’m using Soy Chorizo, which is a plant based protein. It’s not greasy at all which I prefer. In fact, if you are using soy chorizo, you will need to add some additional oil when adding the potatoes and eggs for the burritos.
The soy chorizo cooks and crisps up so nice and still has a similar flavors of regular chorizo. It is prepared the same as regular chorizo by removing it from the casing and breaking it up in a skillet. Cook the soy chorizo until you see some browning.
How To Make A Frittata With Chorizo And Potatoes
Preheat oven to 350 degrees.In a medium sized bowl, crack eggs, and add in milk and salt. Whisk until combined and set to the side.
Heat a cast iron skillet over medium heat. Add chorizo and diced potatoes.Cook for 4-7 minutes, until chorizo is almost cooked through. Stir occasionally throughout, breaking up the chorizo as you go.
Add in minced jalapeno, green onions, tomatoes, and cilantro. Stir to combine.
Carefully pour egg mixture over top and allow to cook on the stovetop for 1-2 minutes, until the edges just begin to set.
Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the frittata has set.
Remove from the oven, allow to cool for 5 minutes.Slice and serve!

How To Store And Re
When making these burritos for storing, don’t add any fresh toppings. These can be added after the burrito is re-heated.
You can add shredded cheese or refried beans to the chorizo, potato, and egg filling, since these will re-heat well.
Assemble the burritos and wrap them in parchment paper. If making different ones, , you can write with a pen on the parchment paper which kind of burrito it is.
Place the parchment wrapped burritos in a zip top bag and press out any air before sealing. I can fit 4 small burritos in a quart size bag.
Store in the fridge up to 5 days, or in the freezer for a couple of months.
To reheat, keep burrito wrapped in parchment paper and microwave for 1 min, or longer if they are frozen. Unwrap, add any toppings you like, and enjoy!

How To Store & Reheat
- To store chorizo con papas in the fridge place the leftovers in an airtight container and store for up to 3 days. If you want to freeze them, place them in sealed bags or freeze-proof containers, add a label with the date and store for up to 3 months. Thaw before reheating.
- To reheat, add 1 teaspoon of oil in a non-stick pan and sauté the leftovers at medium heat until heated through. Or you can also heat them in the microwave for about 2-3 minutes.

Chorizo Potato And Egg Breakfast Burritos
When ready to serve, add potato/chorizo mixture to plate and top with fried egg. Garnish with shredded cheese, sliced green onion and some chopped cilantro. For the scrambled egg version: Mix a couple eggs together in a bowl as you normally would for scrambled eggs. Add to skillet with potatoes and chorizo and cook, stirring, until eggs are cooked.
After it is cooked through, about 8 minutes, place sausage on a paper towel lined plate and allow fat to absorb . Cover with another paper towel and blot the sausage. Saute onion and jalapeno in oil for a few minutes until softened. Mix eggs in a bowl. Add eggs to pan with onion and jalapeno and cook until scrambled.
Add the onions and spices and saute until translucent and soft, about 5 minutes. Add green chilies and chorizo to the pan and stir to combine. Let the chorizo brown, about 4-5 minutes. Reduce heat to medium and add in the sweet potato and stir to combine. Pour in 1/4 cup of water and cover to steam the potatoes. This will take about 10 minutes.
Let bottom of potatoes become crispy before flipping. Add in diced onion, pepper, garlic and Texas Pete Dust. Cook for another 5 minutes until onions and pepper start to brown. Stir in chorizo and cook for an additional 10 to 12 minutes or until crispy. In a medium bowl, combine eggs, 12 tsp of salt and Texas Pete Mexican Style Hot Sauce.

Traditionally Mexican chorizo is made with ground pork and lots of seasoning for a very flavorful and greasy protein. You can find Mexican chorizo at most grocery stores along with different brands and varieties.
When I’m cooking with pork chorizo I prefer to drain the grease once the pork is cooked, but I know some people prefer to leave it. It’s up to you!

Recipe: Fried Eggs With Chorizo And Fried Potatoes
About 10 minutes. Add the cooked potatoes and the butter to the skillet and sauté, stirring and tossing occasionally for about 8 10 minutes. You want to create a bit of a crispy crust at the bottom of the skillet. Add the salsa and a few dashes of hot sauce and continue cooking for about 5 minutes.
To poach the egg in a saucepan add water , bring to a boil and then reduce heat to low temperature to soft simmer). Crack the egg into a ramekin, with a slotted spoon swirl the water in the saucepan. Drop the egg in the water .
Flip the whole thing by laying your palm flat on the tortilla and flipping the whole thing into your hand. Place the tortilla down into the pan and add the potatoes, chorizo, some cilantro and more cheese. Top with remaining tortilla. Flip and cook until browned on both sides. Serve with some pasty store bought salsa and a little sour cream.
In a large skillet over medium heat, add chorizo and cook until a decent amount of fat has rendered and sausage is browned and crisp. Remove sausage with a slotted spoon and set aside. Place pan back on the heat and add onion to the rendered fat. Remove onions with a slotted spoon and add to the reserved chorizo. Preheat oven to 200 degrees F.

In this easy breakfast recipe of course we are referring to Mexican chorizo, not the Spanish type. Spanish recipes for making chorizo links are quite different than the Mexican recipes.
Though both are pork sausage, please note that Spanish chorizo is very different than the Mexican kind. You dont want to swap Spanish chorizo in this or any other Mexican recipe
Spanish chorizo is a cured red sausage, whereas Mexican is a loose meat sausage that is spiced with chiles, spices and other ingredients. Also note that chorizo is not one of the spicy Mexican sausage out there.
Of course here in this recipe we are referring to a healthier, meat-free choice of vegan chorizo. This is what well be using for my recipe.
