My Tips For Easy Peel Hard Boiled Eggs

If youve made hard boiled eggs before, youve probably experienced the occasional stubborn egg that just doesnt want to peel nicely. There are lots of tricks out there for easy peel eggs. Weve tried a few, but have found the following tricks to work best for us:

  • Try not to use the freshest eggs. Fresher eggs dont peel as easily so if you have the chance, buy eggs for deviled eggs a week in advance.
  • Cool the eggs completely before peeling. We find this helps a lot, but if youre still having trouble, crack the cooled egg and place it back into the ice bath. The water sneaks underneath the shell where you cracked it and makes it easier to peel after 5 minutes or so.

Now you might be wondering what the most practical way to peel boiled eggs is. It’s a conundrum, and everyone seems to have a thought on the matter. It’s obviously a simple act, but it’s undeniably frustrating when tiny bits of the shell make themselves known, or the smooth egg white ends up jagged because of the stubborn shell that just won’t peel off. There are believers in peeling the eggs under running water, in a bowl of water, or employing the crack-and-roll method, just to name a few.I fall under the peel-eggs-under-running-water bucket. I find that breaking into the fat end of the egg where the air pocket is, and then peeling under running water, helps to loosen the shell by getting under the nooks and crannies while causing less damage to the egg white. This is no biggie if you’re making egg salad, but it’s not the most ideal if the eggs are served front and center, like in a bowl of ramen or deviled eggs. Not convinced? Here are more egg-peeling techniques to try on your next batch of boiled eggs.

This seems to sort of shock the shell and make it easier to peel. It also halts the cooking process allowing you to decide exactly how your yolks are cooked.

I let my hard boiled eggs sit in the ice bath for about 10 minutes. Then, I remove the eggs.

To peel I tap the bottom and top on the counter to crack. Then, I roll the center along the counter. The peel should easily slide off..

How To Peel Hard Boiled Eggs Easily

Before I figured out how to peel hard boiled eggs, the process drove me crazy. Fortunately, after some testing, I found a sure, foolproof way to peel hard boiled eggs easily every time:

    • Start with eggs that are a few days old. Why? Fresh eggs are slightly less acidic, so the white sticks to the inner shell more. As the egg gets older, the shell absorbs more air, becomes more acidic, and also shrinks slightly. All of these aspects create more space between the egg white and the shell. That means easy peel boiled eggs!
    • Add salt and vinegar to the water before cooking. I already talked about this above. The salt permeates the shell a little bit, and the vinegar helps to break down the shells, making them easier to peel.
    • Cool the eggs in ice cold water for ten minutes. There are multiple reasons to do this. First of all, it stops the cooking process from residual heat, so you dont end up with overcooked eggs. But just as important, it makes for easy peel boiled eggs! The reason is, some of the water permeates the shell, which helps loosen the bond to the egg white.
    • Roll the egg on the counter. Ive tried different techniques for how to peel boiled eggs, and this one wins, hands down. Simply roll the egg on the counter with the palm of your hand, creating cracks all over. This process helps loosen the shell in general. Then, start peeling at one of the cracks toward the center of the egg, and the shell will come off effortlessly from there.

How To Boil Eggs In Hot Water

    temps de cuisson oeuf dur

Given the reasoning above, I see no reason to cook hard-boiled eggs differently from soft-boiled eggs. Plus, the hot water method, which Ive used my entire life , is pretty darn foolproof.

Just bring a pot of water to a boil with enough water to cover the eggs by about an inch. By boiling the water first, it also doesnt matter which type of pot you use as the eggs only hit the water once its boiling: 212°F .

Once boiling, reduce the heat to low and use a skimmer to gently place the eggs in the water. By reducing the heat to low, youll prevent the eggs from bouncing around and cracking. Then, immediately turn the heat back up to a boil.

As soon as the eggs are in the water set a timer. And cook the eggs according to how soft or hard youd like them.
