If youve made hard boiled eggs before, youve probably experienced the occasional stubborn egg that just doesnt want to peel nicely. There are lots of tricks out there for easy peel eggs. Weve tried a few, but have found the following tricks to work best for us:

  • Try not to use the freshest eggs. Fresher eggs dont peel as easily so if you have the chance, buy eggs for deviled eggs a week in advance.
  • Cool the eggs completely before peeling. We find this helps a lot, but if youre still having trouble, crack the cooled egg and place it back into the ice bath. The water sneaks underneath the shell where you cracked it and makes it easier to peel after 5 minutes or so.

How To Boil Eggs:

  • Put the eggs in a large pot with a lid.
  • Pour cool water over the eggs until fully submerged.
  • Put the pot over high heat and bring to a boil.
  • Once the water is at a rolling boil, turn off the heat and cover the pot with the lid.

    My hard boiled eggs always peel very easily. All you need to do is immediately transfer your eggs to an ice bath after you boil them.

    This seems to sort of shock the shell and make it easier to peel. It also halts the cooking process allowing you to decide exactly how your yolks are cooked.

    • Start with eggs that are a few days old. Why? Fresh eggs are slightly less acidic, so the white sticks to the inner shell more. As the egg gets older, the shell absorbs more air, becomes more acidic, and also shrinks slightly. All of these aspects create more space between the egg white and the shell.     • Add salt and vinegar to the water before cooking. I already talked about this above. The salt permeates the shell a little bit, and the vinegar helps to break down the shells, making them easier to peel.
    • Cool the eggs in ice cold water for ten minutes. There are multiple reasons to do this. First of all, it stops the cooking process from residual heat, so you dont end up with overcooked eggs. But just as important, it makes for easy peel boiled eggs! The reason is, some of the water permeates the shell, which helps loosen the bond to the egg white.

Simply roll the egg on the counter with the palm of your hand, creating cracks all over. This process helps loosen the shell in general.
