Here is one of my faves- its super easy, fast, and a last minute go to any night of the week. I am so excited to share this recipe with you all. The pasta is loaded with flavor and comes together in less than 2o minutes. Its not overly heavy and is so light and creamy. A great salad option is my gluten free Broccolini Kale Caesar Salad. This would go great with this pasta dish.

For this pasta dish, I decided to use mascarpone cheese. It has the thick and creamy consistency Iooking for. You want something that coats the pasta really well and sticks.

Instead of prosciutto, I use pancetta. I love using pancetta for a couple reasons. First of all, pancetta is less fatty in my opinion. Secondly, it has the right amount of saltiness that this dish needs. Thirdly, it crisps up so nicely in a pan, and really has that crunch that is needed to balance out the creaminess of the dish.

If you do find that the sauce is too thick-set a side a little of the water that the pasta sat in and thin out the sauce.

Are Egg Noodles Gluten Free

Before I share this super-easy gluten-free egg noodle recipe, I want to make sure you know that most store-bought egg noodles are not gluten-free because they contain wheat flour. Check labels carefully.

One exception is the Jovial gluten-free egg tagliatelle, which is a dried gluten-free egg noodle. It tastes good, but nothing like my homemade egg noodles.

Another store-bought gluten-free egg noodle is Trader Joes gluten-free egg fettuccine. These noodles are fresh and found in the fridge aisle. They are exceptionally good and the closest store-bought brand to the real thing.

Do You Need A Pasta Roller To Make Gluten Free Egg Noodles

You absolutely do not need a pasta roller/machine to make homemade pasta of any kind. So theres all good news here!

I like to use a combination of hand rolling and machine rolling. Hand rolling allows me to control the moisture in the egg noodles as I go along.

We begin this recipe with a relatively tacky dough, since gluten free flours tend to absorb more moisture. But if we dont control for the excess moisture, the raw noodles wont hold their shape.

Rolling the pasta in a machine helps me achieve a uniform thickness throughout the dough. And it also makes cutting into ribbons a snap.

Yes, I believe that you need a food processor to make this recipe for gluten free egg noodles properly. Even a miniature food processor will work .

When I say this, I know that many of you dont have a food processor and will attempt to make this recipe with a bowl and a spoon. This isnt a prohibition against trying!

I try to require as little special equipment as possible in my recipes, since I want everyone to join in the fun. But I will say that, if you dont follow the recipe as written, your results are far from guaranteed.

Its not uncommon for readers to make adjustments to a recipe, often assuming theyre insignificant and find that the recipe hasnt worked as described. You are free to do so, but its not fair to leave a comment saying that you followed the recipe to a T and it didnt work at all.

But it is really just as effective to create nests of raw pasta ribbons and allow them to dry a bit that way. When you boil the pasta, it will separate as long as the ribbons have been dusted with flourno matter how they dried.

This is one of those simple, basic recipes that has only a few ingredients: flours, eggs, oil. The gluten free flour blend you use always matters.

Here, the flours matter even more. I highly recommend using Better Batter, or my mock Better Batter blend .

You can use Cup4Cup, but youll have better results with a blend that has the fortitude of Better Batter.

Either way, youll need the addition of tapioca starch/flour. It helps provide structure and stretch.

Yes, you still need to add tapioca starch/flour even though your all purpose flour blend contains it as an element. I dont recommend freelancing! Just follow the recipe precisely as written.

If you cant have tapioca starch/flour, then youre unable to use Better Batter or Cup4Cup either. And Im afraid you cant make this particular recipe!

Easy: The first reason is theyre easy to make. They require only 3 ingredients that taste like a million bucks when combined. Plus, I use store-bought flour blends which make this recipe a breeze.

Joy: These gluten-free noodles make eating gluten-free joyful again. Every time I make them, I realize that I dont have to miss out on good food just because I follow a gluten-free diet. I find great comfort in these egg noodles and find its worth the effort. Its like a hug in a bowl.

Versatile: You can enjoy these egg noodles with a little olive oil and seasoning, slathered in spaghetti sauce, or topped with a homemade pesto sauce. Enjoy them how you like them most.

Can I Store Gluten

You can easily prepare your gluten-free egg noodles, cook them, and then store them for later.

If you are not using them right away, though, we recommend you cook them for 90 sec, completely dry them off, and then store them in the fridge until you are ready to use them. We don’t recommend leaving the fresh gluten-free egg noodles in the refrigerator for longer than 24 hours as they will begin to lose their freshness soon after this.

You can also dry the noodles out before you cook them if you aren’t planning on using them for a few weeks. In this case, you won’t be cooking them. After preparing the noodles, leave them on a large baking sheet on the side of the kitchen for at least 24 hours. Keep them covered throughout the drying process.

You will cook dry gluten-free egg noodles the same way you cook any other pasta, just add them to boiling, salted water, and drain before serving!

How To Make Gluten Free Egg Noodles

Theres a full recipe card below but Ive also got a bit of a step-by-step guide with photos to show you how to make these noodles.

First of all you need to mix your flours and xanthan gum together. Then beat the eggs together in a separate bowl.

Once you have the two separate wet and dry ingredients its time to start mixing them together into a dough.

Do this by adding the egg mixture to the flour, bit-by-bit.

Keep mixing together until it starts to come together and then add in the olive oil.

It should form a sticky dough this is when we wrap it and let it sit for a while to properly develop.

After its sat for about 15-20 minutes, knead the dough into a smooth ball and then divide into four equal pieces.

One piece at a time, roll the dough out super thin, to around 2mm thick. Make sure you keep turning it so it doesnt stick and use lots of extra flour.

I use this adjustable rolling pin because it means I can roll my dough out evenly.

Once rolled out, trim any rough edges and then use a pizza cutter to cut thin strips these will be your noodles.

Once youve cut all your noodles, gather them together and dust with extra gluten free flour, placing them down in a nest.

Repeat this with all the dough and then youre ready to cook!

I leave my noodle nests to dry out a little before cooking, but it really is that easy.

Jovial is a well known name in the gluten-free community. This is my first choice when wanting to use an egg based pasta. There are only two ingredients and those are organic brown rice flour and organic eggs. This pasta does hold it shape relatively well. My one recommendation is to not over-cook these noodles as they will fall apart. I recommend testing the pasta two to three minutes before the timer goes off, so as not to over-cook them.

These noodles are a great option if you need something that is kosher. The ingredients are: tapioca starch, potato flakes, potato starch, pasteurized egg whites, emulsifier, anthem gum, spices.
