    Heres a sure-fire way to have the perfect hard-boiled eggs.

  • Bring about 3 inches of water to a boil in a large pot. Once boiling, pull the eggs from the refrigerator. Using a slotted spoon or fitted strainer basket, carefully place or submerge the eggs in the boiling water. Boil the eggs for exactly 10 minutes.
  • While the eggs are boiling, prepare an ice bath by filling a large bowl with at least 5 cups of ice cubes. Add enough water to cover the ice cubes.
  • Use a slotted spoon to pull the eggs from the boiling water. Immediately place them in the ice bath, making sure that each egg is submerged. Let them sit in the bath for at least 15 minutes.
  • Once completely chilled, either peel the eggs and assemble or transfer to the refrigerator for up to 7 days.

    How To Make Keto Deviled Eggs

  • Fill a pot large enough to hold your eggs with water and bring to a boil over high heat on your stovetop. Add eggs to boiling water, lowering into the water with a slotted spoon.
  • Cook this way for 30 seconds, then reduce the heat to your stoves lowest setting and add the lid. Continue to cook for 13 minutes.
  • Meanwhile, prepare an ice bath, and place cooked eggs in the ice water.
  • Peel and slice eggs in half.
  • Place yolks in a large bowl, along with the mayo, dijon, cayenne, and salt. Mash together with the back of your spoon.
  • Fold in the cheese, bacon, and chives.
  • Fill the egg white halves with the yolk mixture, garnish with additional bacon and chives, and enjoy.

    Deviled eggs are a classic crowd pleasing recipe. Everyone seems to have their own take on it and Ive never met a deviled egg that I didnt like!

    This one takes the cake for me though. Its got a unique blend of ingredients that marry perfectly well together. Mayonnaise, horseradish, cider vinegar, melted butter, and seasonings from your spice rack take these to another level.

    The challenge is to keep my self from eating the whole batch!

    How To Make Them

  • Start by making perfect hard-boiled eggs. My article Perfect Easy Peel Hard and Soft Boiled Eggs is all you need! Boil the eggs for 12 minutes. See the Note in the recipe for the quick and dirty. Peel the eggs when theyre chilled and slice in half.
  • Scoop all the yolks out of the egg whites into a small bowl. Mash them finely with a fork. The more theyre mashed, the smoother the filling will be.
  • Stir in the mayonnaise, Dijon mustard, vinegar, and salt until smooth.
  • Transfer the mixture to a piping bag with a wide open tip or open star tip. Pipe into empty egg white halves. Alternately, use a spoon to scoop the mixture into the egg whites. Sprinkle with a dusting of smoked paprika and top with a couple pieces of crisp bacon.
  • How long do deviled eggs keep?

    These keto deviled eggs are best served right after assembling, but you can make the filling ahead of time. Keep the filling in an airtight container in the fridge for 1 day, maybe 2, and pipe soon before serving. Leftovers can be kept in an airtight container for a couple days.

    Can I leave off the bacon?

    Absolutely! I love the added little crunch, saltiness, and smokiness the bacon provides, but you wont be missing out if you leave it off.

    Tips For Peeling Hard

    For a beautiful deviled egg platter, you want the peeled egg white to come out clean and smooth. Generally, older eggs are the easiest to peel. If using farm fresh eggs, use the instant pot boiled eggs method to cook eggs for easier peeling. Follow these tips for peeling hard-boiled eggs to prevent the shell from sticking:

    • Chill boiled eggs in an ice bath right after they are cooked
    • Roll the egg on the counter to crack the shell all around then soak in a bowl of water for a minute. The water gets under the shell and makes it easier to peel.
    • Start peeling the egg from the wide end of the egg where the air pocket is to get under the membrane.
    • If you get a stubborn egg, peel while submerged in a bowl of water or under running water

    The Spanish smoked paprika we use is made by La Dalia. Their Pimentón de La Vera has been produced in Spain since 1913 and they were the first company to make the famous smoked paprika of La Vera. The peppers used to produce La Dalias Pimentón La Vera are hand-harvested each year in early autumn. Just after harvesting, the peppers are sent to wooden smoke houses filled with the smoke of Encina oak wood fires. The peppers are never touched by fire, as they are placed on grids above the flame. For 15 days, the peppers are dried in this intense smoke. Once dried, La Dalia grinds the peppers on traditional granite millstones resulting in a silky, rust-red paprika that is both deeply flavored and smoky. Their smoked paprika is a key ingredient in traditional Paella, but it is also excellent when used to flavor meats, fish, and sauces.

    First of all, it is really not that pricey just a bit difficult to find. We found the answer from an importer of Spanish foods and kitchen ware, La Tienda. They also offer excellent Spanish chorizo and ham all low carb!   • Hard-boil your Eggs: Fill a large saucepan with 12 eggs and just barely cover them with cold water. Bring the water to a boil. Let eggs boil for 14 minutes. Immediately add eggs to an ice bath for 10 minutes then peel.
  • Make Yolk Mixture: Gently slice in the eggs in half and put egg yolks in a small bowl along with mayonnaise, mustard, fresh dill and salt. Using a fork mash the yolks together with other ingredients until its smooth. Then fold in half the bacon crumbles and set aside.
  • Assemble & Garnish: Spoon or pipe your yolk mixture into prepped egg white halves. Arrange egg white on a serving tray and top with more crumbled bacon, chives and a dash of smoked paprika.
