McDonald’s English muffins aren’t bad per se, but there are few things in life that can’t be improved with more butter and more browning. I tested toasting English muffins through various methods, including in a toaster, under a broiler, and directly over a gas flame. The best way to prepare one for a sandwich is to lightly butter the surface, then place it face down in a moderately hot nonstick or cast iron skillet.
The real key is you can’t just leave it there. If you do, as it heats up, the outer edges will contract, causing the English muffin to cup upwards and away from the pan. You end up with a muffin that is toasted only around the outside edges. For optimal browning , you must gently press down on the center of the muffin halves as they toast, rotating and swirling them around.
A nice, even golden brown is what you’re after, and moderately low heat with plenty of motion is the way to get there.

If there is one true flaw in the way the Egg McMuffin is presented, it’s the stacking order. McDonald’s serves its sandwiches with cheese on the bottom, followed by the egg, followed by the Canadian bacon.* I never understood this stacking order. Shouldn’t the cheese be at the top, where the heat rising from the egg and bacon will help it melt better? Don’t you want those cheese corners draped around the other fillings to bind them as a cohesive whole, rather than sticking out of the bottom of the sandwich, as firm and stiff as the resolve of a McDonald’s manager telling a preOctober 2015 patron, “I’m sorry, but we’re no longer serving breakfast”?
*And before you wise guys point out that maybe I’m eating it upside down, McDonald’s actually displays the sandwiches this way in menus and advertising.
Think about it: Would you place the cheese underneath the beef in a cheeseburger? I’ve heard various explanations as to why the sandwich is stacked this way. Better cheese-to-tongue contact, maybe, though I don’t see why you’d want the cheese to touch your tongue before the egg or the bacon. Perhaps it’s an artifact of the ordering of the assembly line at McDonald’s, maybe the cheese dispenser simply comes before the egg-warmer as the sandwich is made? But this wouldn’t explain why other McDonald’s breakfast sandwiches are stacked with cheese on top.

You can try other popular breakfast meats on your copycat McMuffin, like regular bacon, turkey bacon, butterflied pork or breakfast sausage. Make round chorizo sausage patties for a spicy version. Thinly sliced strips of seasoned steak would also taste amazing! Pile on fresh cold cuts you might already have in the fridgesliced turkey, ham, roast beef or bologna. I would even make my McMuffin with Spam sometimes. Some folks might like theirs with smoked salmon .
You can make your McMuffin gourmet, too. Use a slice of pepper jack cheese. Add a sprinkle of chopped chives or tarragon. Whisk the egg with chopped onions and diced green pepper before pouring it into the egg ring. Add a dash of hot sauce. The flavor combinations are endless!

Third Place: The Sausage Mcmuffin Was Simple Yet Satisfying
Without any egg, this sandwich was pretty much the breakfast version of a cheeseburger. And honestly, that wasn’t a bad thing.
The delicious combination of the toasted English muffin, tangy American cheese, and spicy-savory sausage was better than I expected.
McDonald’s English muffin tasted like it was coated in salted butter, which enhanced the entire meal.
The delicious, round egg patty used on McMuffins was definitely missed, but even without it, this option was still quite good because of how yummy everything else was.
It wasn’t the most unique or inspired breakfast sandwich but was still a better option than any of the McGriddles.
Plus it wasn’t something I needed to be in the mood for. This sausage McMuffin would be satisfying on pretty much any kind of morning.
Second Place: The Egg Mcmuffin Was Simple Yet Flavorful
Before there were McGriddles and biscuit sandwiches, there was the egg McMuffin.
Perhaps its longevity is a testament to how you don’t need a bunch of strong flavors to make a tasty meal. The McMuffin is another standard American cheese, egg, and meat combo served between a toasted, buttered English muffin.
What makes it a true standout is that the egg the star of the show is cooked through a unique process of poaching and frying.
This extra step proved worth it since the egg tasted super fresh, fluffy, and flavorful. It was definitely an upgrade from the dull, rubbery scrambled squares that brought down several of the other sandwiches in this ranking.
Combined with the slight crunch of the English muffin and melty cheese, it was absolutely scrumptious. You can add a few dashes of hot sauce to the egg or dip the meal in ketchup to take it to the next level.
But I really could’ve done it without the Canadian bacon. It tasted like a bland piece of microwaved ham. I tossed it out after the second bite and ate my McMuffin with just the egg and cheese.
Consider this my plea for all US-based McDonald’s to introduce a proper vegetarian breakfast sandwich, or at least give us a slightly cheaper, meatless McMuffin.

Fourth Place: The Sausage Egg And Cheese Biscuit Was The Stronger Option
Of the two biscuit-and-egg sandwiches, the sausage one was the stronger option.
Unlike the bacon, which awkwardly stuck out of the sides, the sausage actually fit on the sandwich. Plus the meat’s bold, savory taste was a better match for the dense, bready biscuit, bringing out the rich, buttery flavors.
The egg was once again a forgettable, flavorless addition, but the union of flavors between the sausage, melted cheese, and buttermilk biscuit was pleasant enough to make me overlook it.
The cheese and pork both added a much-needed element of moisture and creaminess that was lacking in the other biscuit sandwiches. Since the bun was dense, it soaked up all of the oiliness pretty well.
I wish McDonald’s would have opted for cheddar cheese instead of American, but I’ll still take it.
I’m not sure it’s worth buying, especially when the sausage, egg, and cheese McMuffin tasted much fresher, but if you’re a fan of biscuits, this is a decent option.

Toast the muffins while the eggs are cooking, and let the finished eggs cool before building the sandwiches. Wrap finished sandwiches individually in waxed paper, parchment, foil or plastic wrap before storing them in a freezer storage bag. Store in the freezer for 1-2 weeks.
To reheat, put a sandwich in the fridge to thaw for a couple hours. Remove the packaging and wrap the sandwich in damp paper towel. Reheat in the microwave for 1-2 minutes at reduced power.

These McDonalds inspired breakfast English muffins taste just like the real thing, except theyre made with a fraction of the calories and sodium.
I started running again this week in order to train for a hike we are going on later this month. Its seriously been a hot minute since I last worked out and I need to get back in shape, fast! Todays run was a tad bit more difficult because I havent done it in a while, but as always, it gets easier as you get used to the pace and rhythm. Then you start running fasterand the breathing becomes easier. Its really amazing what the body is capable of doing.
When all was said and done, I came home ready for food! Covering three miles before 8am calls for something substantial to refuel my body. Breakfast was a McMuffin sandwich, and the best part was that it was 100% homemade and 90% done. All I needed to do was to pop it in the microwave for one minute and then into the toasted oven for a few more to get the muffin all nice and crispy on top. Canadian bacon, egg, and cheese held together by a toasted English muffin just the way I like it.
If youve ever had them, I bet youll agree that while McDonalds breakfast sandwiches are pretty tasty, there is certain guilt factor that comes with eating them. Do you know what I mean?

The first step to a better sandwich is better ingredients. An Egg McMuffin has four:
- A standard-issue, soft English muffin
- A factory-farmed egg
- A slice of perfectly round Canadian bacon
- A slice of orange American cheese
I started by replacing the English muffins with super high-end English muffins from The Model Bakery in Northern California , but they were simply too good. The McMuffin lost its essential McMuffininess. Instead, I used a good quality supermarket brand.
The eggs were an easy upgrade. Although I know that in blind taste tests, factory-farmed eggs are indistinguishable from “better” eggs , but simply knowing my eggs are coming from chickens that are treated well is enough to make them taste better to me.
Canadian bacon is essentially cured pork loin that has been sliced. The stuff McDonald’s uses is perfectly round, which means it’s probably more like chopped-and-formed ham. It lacks the meaty bite of real Canadian bacon. Look for stuff that is sliced from whole pork loins, which has the added benefit of providing a little ring of fat around the outside that crisps up as you fry it.
Finally, for the cheese: American works great and is hard to improve upon for a sandwich like this in which the primary goal is easy meltability, but if you want a little more flavor, a slice of cheddar, Swiss, or jack will do. Remember: firmer, drier cheese doesn’t melt as well. Plan accordingly.

Cook Canadian Bacon. Arrange Canadian Bacon on a baking sheet fitted with a wire rack. Bake in 400º oven for 15 minutes.
Bake eggs. Spray a muffin pan with nonstick cooking spray. Add a fresh egg in each cup of the muffin pan and set aside. Bake the last 10 minutes of baking time for the bacon.
Toast English Muffins. Split English muffins in half, spread with butter and place onto a baking sheet. Add to the bottom rack of the oven the last 10 minutes of baking time for the bacon.
Assemble your Egg McMuffin by placing a piece of cheese on a warm half of English muffin. Remove a baked egg from the muffin pan and place on top of the cheese.
Add slice of Canadian Bacon and then top with other half of English muffin.
They are ready to serve immediately or allow to cool for a few moments and wrap individually to store in the refrigerator for reheating within the next day or so or to store in a freezer-safe container in the freezer.
My recipe is for six breakfast sandwiches, but as you can see from my photos, I like to make these in bulk! You can easily increase or decrease the recipe to meet your needs!
