- I use a silicone mini muffin tin for this recipe. I think they are lifesavers because nothing ever sticks, the egg bites just pop right out and it is never a problem.
- This recipe makes 24 very mini muffins packed with crispy bacon and lots of cheese! You can also use a regular sized muffin tin and get 12 muffins from this recipe, but youll need to adjust the cook time accordingly.
- I like to use a mixture of cheddar and pepper jack for a bit of a kick, but sub in any of your favorites.

My kids tend to eat cereal and frozen waffles most mornings for breakfast. I tend to prefer a cup or two of coffee before Im ready to eat much. This doesnt always work in my favor because right about the time Im ready for an egg or a bowl of oatmeal its time to run out the door for this or that.
Ive been known to hit a Starbucks drive-thru for their ham and bell pepper egg-bites for a quick fix and an easy breakfast on the run. It occurred to me last week, after yet another breakfast in the car, that I could probably figure out a decent copy-cat recipe.
My kids really like eggs too so I was motivated to come up with a recipe that would break up their frozen waffle addiction. I researched how to keep the eggs tender and found that baking them low and slow is the secret. I mixed up a few different combinations and found the bacons salty bite is exactly the savory flavor Im looking for, while my kids love plain ham and cheese. I was able to get them to grudgingly admit they cant taste the spinach so its fine mom if I hide a little of the green stuff in their egg bites.
I settled on bacon, red bell pepper, a tiny bit of red onion and a big handful of fresh baby spinach as my favorite combo. The melted cheddar cheese makes this recipe decadent and the eggs tender and perfect for a quick breakfast on the go. I made a batch just this morning, running out the door with two in a paper towel and the rest saved in the refrigerator for breakfast the rest of the week.

Thats why meal prepping breakfast is such a good idea. You can make it ahead of time, when you have a little more time, then just heat it up in the morning before work. That just makes life so much easier.
One of our favorite make ahead breakfast recipes is this Bacon And Cheese Egg Bites recipe.
Theyre sort of similar to the egg bites Starbucks sells. The flavors are different and the cooking method is different, but theyre similar in shape, size, and practicality.
Ours are better because theyre homemade and a lot more budget-friendly. But theyre also so much easier. The Starbucks version uses a sous vide technique, which isnt really necessary. So since we skip that, we make these easier.

How To Make Egg Bites On A Traeger
Once you have all your ingredients the process is simple.
Set up your smoker to smoke at 225-250 degrees. I like using Oak wood for this recipe.
Once your smoker is up to temp place the strips of bacon on the grill grates . Sprinkle the bacon with your bbq rub and let the bacon smoke for 30-45 minutes.
This is an important step if you dont smoke the bacon prior it will not cook all the way when you make the egg bites.
While the bacon is smoking combine the rest of your ingredients in a large mixing bowl. Eggs and milk first, followed by the cheese and any other ingredients you may be using.
Get out a muffin pan and spray each slot with some nonstick cooking spray.
After 30-45 minutes remove the bacon from the smoker and place one slice of bacon inside of each muffin tin slot. Adjust the temperature of the smoker up to 400 degrees.
Pour the egg mixture into each slot, filling to about two thirds full. Once the smoker is up to temp place the muffin tin in your smoker, and let the bacon and cheese egg bites cook for about 15 minutes.
After 15 minutes in the smoker, the egg bites are done. Remove them and let cool on the counter for about five minutes. Use the backside of a butter knife around the edge of each egg bite to remove from the muffin tin and enjoy!

Can You Freeze Egg Bites
Absolutely! Cook them as directed, let them fully cool and transfer them to a flat surface tray like a cookie sheet or cutting board. Place them in the freezer for 1 hour then transfer them to a freezer-friendly container.
To Reheat
You can pop these in the microwave and reheat 1-2 mins from frozen, or 30 seconds from the refrigerator. These also reheat great int he oven or toaster oven.

Although I felt a little intimated trying figure out how to work the thing, and at the whole responsibility of not blowing my kitchen up, I knew EXACTLY what my first recipe would be with my shiny new kitchen toy: EGG BITES! Im a lot obsessed with Starbucks Sous Vide Egg Bites and if youve ever had them, you understand why. They are soft, silky, heavenly little egg cups. Kinda magical if youve never had a sous vide egg before. And if youve had them then you also, unfortunately, know that despite being delicious theyre kinda small, not all that filling, and pretty darn pricey. Hence the need to make my own! Easy Low Carb Bacon Cheese Egg Bites
I love a good Starbucks hack recipe and these low carb bacon cheese egg bites are just that. The perfect breakfast or snack food that is full of protein, bacon and cheese. ALL my favorites in one yummy bite!
I also love that you can use the base for this recipe and add your own herbs, cheeses and meats to make it your own!
INGREDIENTS:
- 1 cup whole milk ricotta cheese
- 1 teaspoon salt
- 1 cup cooked bacon, crumbled
- 2 cups shredded Swiss or Gruyere cheese
STEP 1: Preheat the oven to 400 degrees. Grease 12-count muffin pan or line with reusable silicone muffin liners.
STEP 2: In a large bowl, whisk eggs until well blended. Add heavy cream, ricotta, garlic powder, onion powder salt & pepper and whisk well.
STEP 3: Divide crumbled bacon among 12 muffin cups, then divide cheese among 12 muffin cups.
STEP 4: Pour egg mixture over bacon & cheese mixture in each muffin cup until full.
STEP 5: Bake in a preheated oven for 15-20 minutes, or until the egg is set and muffins are lightly browned.
Tips For Making Starbucks Copycat Bacon Egg Bites

These 5 tips will help you make perfectly fluffy bacon egg bites each and every single time.
- Whisk in the cream before the bacon and cheese. Be sure to whisk your eggs with cream before adding bacon and cheese. This will make for a more uniform egg bite. If youd like, supercharge the mixing process by using a blender.
- Chop your egg bite additions in a similar size. The more even your chopping, the more uniform your egg bites will bake!
- Generously coat the muffin tin. Make sure to spray your muffin tin with cooking spray before adding the egg mixture into each egg bite mold. You dont want your bites to stick to the pan!
- Transfer the egg batter properly. Use a ladle or a measuring cup to pour the egg mixture into the muffin tin.
- Use only egg whites. If you want to lower cholesterol, swap out the whole eggs for only egg whites. Reduce waste and save the yolks for french toast or homemade air fryer chicken tenders.

Any time you have a recipe that requires cheese to melt, shredding your own block of cheese is the way to go.See, packaged pre-shredded cheese has preservatives in it that keep it from clumping together in the bag. But, those same preservatives prevent it from melting really well.So, we always recommend shredding your own cheese. If you only have pre-shredded cheese, thats fine, but youll want to make sure you use a tightly packed 2 oz. when making these.
Do you have to make these in a baking mold?
The silicone baking mold we use for these makes them so incredibly easy. You dont need to prepare it in any way. It doesnt have to be buttered because its non-stick as is. So you just pour the egg mixture in and the egg bites pop out when theyre done.And no egg is left behind, so clean up is so incredibly easy.If you dont have this silicone baking mold, I highly recommend you purchase one. You can use it in this recipe and you can use it to make hot chocolate bombs or tartufo as well.If you dont want to buy a mold, you can use a muffin pan. Personally, I dont recommend it because you need grease the muffin pan and then theres still a chance of the egg getting stuck in the pan, resulting in a lot of messy clean up for you.

A Quickie Breakfast Thats Not Cereal
I have made these bacon & cheese egg bites so many times lately I could make them in my sleep. Theyre so simple and everyone loves them. I keep them stocked in the fridge for a quick grab & go breakfast throughout the week. Ive also made them for several morning breakfast events and for friends whove had babies or are in the process of moving. They always get rave reviews and I get so many requests for the recipe that its about time I share it here. Both kids and adults gobble them up. A great savory option for breakfast or brunch.

How To Make Bacon And Cheese Egg Bites:
Pre-heat the oven to 325 F.
Make your bacon. Set it aside to cool completely. Break it into crumbles when it cools.
Add the eggs into a bowl.
Add the heavy cream and mix.
Side note: If you dont have heavy cream, you can use milk although these taste a little more rich when you use heavy cream.
Shred the mozzarella cheese into the egg mixture and stir.
Cut the green onion into small pieces. Add them into the egg mixture and stir.
Add your crumbled bacon into the mixture and stir.
Add your seasonings. This is a great place to use the FinaMill. Stir until combined.
Take a silicone baking mold and set it on top of a cookie sheet. Make sure one of the ends of the molds lies on the edge of the cookie sheet to keep it flat.
Divide the mixture between the six cavities in the mold.
Bake for 30 minutes.
The egg cups will rise above the pan as they cook but will quickly deflate after the baking mold is removed from the oven.
Let them cool slightly on a wire rack before serving.
