I thought they basically tasted of air freshener but if you lick bits off your hand often enough it seems you learn to love them. Do you have a typical breakfast you make for yourself everyday? Mine is Oatmeal with blueberries and Vietnamese Cinnamon. No other cinnamon will work. In fact, the blueberries I use are Wild Blueberries from Whole Foods. Believe it or not most of the time I use the frozen berries. Why? Why is a dose of avocado and egg toast so satisfying? Three words – protein, fiber and fats. For the toast, I use a hearty whole wheat bread with lots of seeds . Fiber galore!

How To Make It

Fill a medium-sized bowl with ice water and set aside. Place the eggs in a small pot with enough water to cover them. Bring to a boil, turn off the heat, cover, and let the eggs cook for 7 minutes. Remove them and then slip them into the ice water. After a few minutes, remove the eggs from the water, peel, and roughly chop them.

Toast the bread and drizzle extra virgin olive oil over it, and sprinkle with salt and pepper.

Divide the chopped avocado,tomato and egg evenly among the toast slices.

Drizzle the top with a bit more extra virgin olive oil and then sprinkle with salt, pepper and either Togarashi or crushed red pepper.

Ingredients:

1 Slice of Preferred Bread1 Cup Cherry Tomatoes or Preferred Vegetable1 tbsp Butter 1 tsp Salt 1 tsp Black Pepper

Directions:

  • Cut 1 medium avocado in half.Spoon half of the avocado into a bowl and mash to desired consistency. Store the unused half for future use.
  • Add 1 tsp of salt and 1 tsp of pepper to avocado mash for flavor. You can substitute garlic salt and red pepper flakes for additional flavor.
  • Over low heat, melt 1 tbsp of butter or butter substitute in a small frying pan. Once melted, crack the egg into a bowl and add to pan. Cook to desired consistency:
